Gena and Pat Neely's roasted red pepper and tomato soup. Super easy, healthy and utterly delicious!
My favorite family cooking traditions
There's nothing like my family's tradition of Puerto Rican PT's, rice and beans. This is the ultimate comfort food that I have grown up with. I hope to be as accomplished at perfecting the spanish rice just like my abuelita!
My cooking triumphs
Ree Drummond's bacon penne pasta. The Pioneer Woman never ceases to fail me! I also managed to perfect a true white cream sauce using all the naughty stuff: butter, cream and lots o' cheese! The trick here was to add an egg at the very end. It adds a richness like no other!
My cooking tragedies
I managed to burn the oil needed for a very yummy lemon sauce for chicken scaloppini. I still need to work on getting this recipe just right!

Cheese Stuffed Mushroom Appetizer
Love these!! I make my filling with cream cheese and parmesan. Add bacon for another layer of flavor. Super easy!
