Mom's Stovetop Pork Ribs

Tried it with cut up pork roast and it was delicious. I was afraid it would be dry so after browning the meat I added some water and corn starch to make a sauce. With some added salt it was fine but it would have been fine without the sauce, meat was tender and juicy.

Mandarin Shrimp and Vegetable Stir Fry

Loved it. Will try it next time with chicken. I used less heat; didn't measure, but it was likely about 1 tsp. tabasco which was enough of a bite. Very good favour overall.

Bacon Wrapped Pesto Chicken

Stuffed chicken is often dry so I was delighted to find this so juicy - I guess all that oil really does work even if we do lose the health value of skinless breasts. I did what others suggested and precooked the bacon and it was definitely worth it. I'd try this again.

Easy Meatloaf

This is a good basic meatloaf recipe, not dry. I do use canned evaporated milk, it really makes a difference. I also added a little savoury. For bread crumbs I prefer soft crumbs and not too small. I baked it for just over an hour in a meatloaf pan. Next time I'll try the shallower pan.

Chicken Breasts with Balsamic Vinegar and Garlic

This made a nice chicken, not dry and quite tasty. The mushroom sauce was pretty good, though next time I may thicken it a little with some cornstarch. Also didn't need quite as many mushrooms.

Green Beans with Cherry Tomatoes

This made a fabulous side dish for a Christmas dinner for 16 people. I didn't measure the beans and tomatoes but made lots! I used two crushed garlic, sautéed with about 1/3 cup basil leaves, then tossed together at last minute, as the recipe states, just enough cooking to soften the tomatoes. Garlic and basil made the taste interesting but didn't interfere with the wonderful natural taste of the beans and tomatoes.
