Chicken Cordon Bleu I

Oh yum! I always read reviews before I cook and between the original recipe and suggestions in the reviews this was wonderful! I used Egg Beaters to wash the chicken after I rolled it up (I butterflied one breast and pounded the other) and used Polish deli ham (I agree that regular ham would taste better) AND made the sauce. With rice and broccoli this was a fabulous meal! Keeping this one in the rotation for sure!

Gina's Crab Stuffed Chicken Breast

Yum is right! I only made one serving and had a bit too much crab (leftover from crab leg dinner) and I stink at flattening chicken breasts so it was sloppy - but the taste was fantastic! The only thing I changed was to add an ice cube's worth of lemon juice to the sauce, because I didn't have any dry wine. I really wanted to take a picture before I ate but it smelled too good and I had to dive right in! Good one Gina!

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

I read the reviews and added mayo to the spinach mix, along with onion & garlic sauteed in the bacon grease. I only mixed one bacon slice in the spinach and used two slices to wrap the breast in. I'll make it healthier next time and forget the bacon wrap, but I will keep this recipe for future reference! Very good!

Braised Pork Chops

I have to start eating better so I decided to try this one. Other folks are right, the chops were VERY moist! Didn't have any marjoram, and next time I'll use less pepper (we're not keen on too much) - and I did use all chicken broth. I think I may add some mushrooms or even onions to the saute next time, but it's going into the rotation!

Turkey Wild Rice Soup II

This soup is the BEST! I did change a little - used Rice-A-Roni long grain & wild rice instead of uncooked, and didn't add the lemon juice (I will try that one day) but I made two batches with all my leftover turkey. I have 12 portions frozen for lunches - YUM!

Swedish Meatballs

Yum! Had a taste for Swedish meatballs and this recipe sounded great (plus I had everything except the evaporated milk, I used regular milk). Very easy to make, even my picky honey liked them (and I haven't made a homemade gravy he likes yet, until this one!) I also baked the meatballs and added some sour cream at the end. This one is going into my recipe box!

Lobster Bisque

This bisque was GREAT! I made it for my daughter-in-law when she came home from the hospital with my first grandchild (a boy, he is beautiful!) and we both loved it! I looked at a bunch of recipes for bisque and checked all the reviews, and added 2 Tbsp of tomato paste as well, and some crabmeat (I only bought 2 small lobster tails) and it was so tasty! This one's a keeper, I've put this in my "favorite recipes!"

Salmon Fillets with Creamy Dill

Made this dish last night - very good! I may have put a little too much on the salmon, though, it overpowered the fish. I used light mayo to lower the fat and it was great!
