Easy Meatloaf

I really liked this recipe and it was a big hit with my husband too. I always know when he really likes my recipe if he tells me he likes it immediately after his first bite. With this recipe he said it was fantastic before I even realized he had taken a bite. I did take the advise of other reviewers and sauteed the onions and add sauteed garlic. I also added shredded carrots and used table water crackers. I will most certainly use this recipe again.

Ultra Creamy Mashed Potatoes

I really liked this mashed potato recipe. I have had trouble in the past with my mashed potatoes being too pasty so I thought I would look for a recipe that would resolve that problem for me and this recipe did the trick. I made a couple substitutions, I used sour cream instead of the light cream and didn't have chicken broth on hand so I substituted chicken bouillon. I will most definitely use this recipe again. Thanks.

Fluffy Peanut Butter Frosting

This recipe was good but not exactly what I was looking for (trying to replace my grandmothers, lost peanut butter frosting recipe). I should have known by the title that it may not be as creamy as I was looking for. It was extremely light, and fluffy and looked slightly loose looking. I'm guessing that was because the butter was a little over softened and the peanut butter was seperating slightly. Overall it was good but I will keep looking.

Octoberfest German Potato Salad

My friends and I loved this recipe. I made one slight change I used rice vinigar instead of regular because I heard it was more mild and good for dressings because of this. It turned out terrific.

Green Bean Stir-Fry

I can now say, "good bye" to the same old green beans I use to always make. My husband and I loved this recipe. I made some slight changes this time. I used Canola oil, Splenda brown sugar and low sodium soy sauce. Next time(and there will be a next time because I find it difficult to get my husband to eat veggies) I'll try to stir fry the garlic with the beans (or to use a little less). Although I found the taste was really excellent I think I the raw garlic was a bit to strong for me. I don't know much about cooking but I think it may help if I cook it a bit.
