Butternut Squash Ravioli with Sage-Brown Butter Sauce

Reviewed: Sep. 1, 2008
I only used one wonton with a teaspoon of filling and folded into a triangle. I had a lot of filling left over that put into the freezer to make again. My Husband kept saying how gourmet this dish was.

Patty's Mom's Black Bean Soup

Reviewed: Dec. 12, 2008
Great soup, I changed the cooking method and used my slow cooker. I added the ham bone, soaked beans, cooked onions & celery along with rest of the ingriendents to the cooker. I also added cumin and cayenne to the soup. Cooked on low for 8 hours. Pureed the soup with an immersion blender, a lot easier! Topped soup with cheese and crumbled tortilla chips.

Sun-Dried Tomato and Blue Cheese Burgers

Reviewed: Jun. 18, 2007
My only change was ground lean turkey because I am not a big fan of beef. The burgers were amazing!!!! We cut the recipe in half and only made 6 instead of 12, next time I will add a little more blue cheese. My husband wanted to be the first to submit a photo, but that was too much pressure =)

Zucchini Parmesan

Reviewed: Aug. 3, 2007
After reading reviews about the dish being watery, I salted my zucchini for a half hour to remove the moisture. I also threw it in with the onion and garlic. As I poured the sauce (Bertolli Tomato & Basil) over the zucchini mixture that is when I realized that it was going to be the sauce that was going to make it watery. I was right...maybe adding tomato paste to thicken it? Besides that it was very good and I served it over ziti.

Easy Pumpkin Cream Trifle

Reviewed: Jan. 1, 2008
My Husband and I made this for Christmas Eve desert; easy to make and very good. If we were to make this again, we would go easy on the nuts and add some type of caramel/butterscotch sauce after the cake layer. Made the day before!

Spinach Crumb Casserole

Reviewed: Apr. 25, 2008
I made some changes due to what I had on hand. I used shredded swiss cheese inplace of the process cheese. Also I did not have a 1 qt dish so I used 4 1/2 cup ramekin dishes (sprayed with Pam). To cut down the calories I used egg beaters, fat free milk and ICBINB Light. So far I have made this twice..very good!

Angela's Oriental Chicken Noodle Soup

Reviewed: Jul. 7, 2008
Very easy to make and good. I used 4 cups of water and had spinach on hand to replace the bok choy. I added a teaspoon of soy sauce and Asian seasoning from Pampered Chef. Next time I'm going to use the Oriental Ramen Noodles and 1/2 of the seasoning packet.

Mini Frittatas

Reviewed: Sep. 1, 2008
I grated 3 potatoes and squeezed out any excess water before cooking. I had skinless Polska Kielbasa that I chopped up and added to the potato mixture after 5 minutes. I was able to get 16 frittatas and were done in 20 min.

Lentil Curry Soup

Reviewed: Aug. 3, 2008
This was a good soup, even better the next day! I used a sweet potato (instead of a baking potato) and added it to the pot before the other ingredients, cooked for about 7 minutes. I was unsure when to add the broth so I added some during blending and the rest afterward.

Italian Beer Marinated Chicken

Great way to use the beer that your friends "conveniently" leave behind. Flavor was great, I'm sure it depends on the style beer used.
