Cream Cheese Basil Summer Squash

This became a 5-star review for the following reasons.....we bumped up the garlic to 3 cloves and used an Italian Seasoning Salt. We also, as suggested by other reviewers, drained the liquid before adding cream cheese(to cut the calories, we used a 1/3 less fat cream cheese). This was incredibly easy and friggin' awesome; it will be something we will make again and again as both a side dish or a main dish on those simple late nights.

I didn't add sparkling water, lemon or the the pomegranate seeds. I did add a splash of lime juice to the drink. Pleasant on the taste buds! Thanks Joan!

Garlic, Spinach, and Chickpea Soup

I did not have some ingredients on hand, had reduced fat peanut butter and fat free milk...seemed to work out well. I blended half of the soup when the potatoes were tender. Good soup but was missing something, husband suggested shredded chicken.....several times =)

Lentil Curry Soup

This was a good soup, even better the next day! I used a sweet potato (instead of a baking potato) and added it to the pot before the other ingredients, cooked for about 7 minutes. I was unsure when to add the broth so I added some during blending and the rest afterward.

Spicy Slow Cooker Black Bean Soup

Delicious! I did not have any jalapeno peppers but I did use an onion and 2 carrots, chopped. I used an immersion blender at the end and added fresh cilantro before serving.

Ramen Noodle Frittata

I was surprised that this wasn't too salty with the two packets of seasoning. Not a bad dish! I added a little bit of half and half to the eggs, and first put the the noodles in the pan and poured the egg mixture over them. Instead of trying to flip the Frittata over, I place it under the broiler for 2 minutes. This would be good with crumbled bacon, fresh spinach, chopped ham...Good base to personalize to your liking.

Angela's Oriental Chicken Noodle Soup

Very easy to make and good. I used 4 cups of water and had spinach on hand to replace the bok choy. I added a teaspoon of soy sauce and Asian seasoning from Pampered Chef. Next time I'm going to use the Oriental Ramen Noodles and 1/2 of the seasoning packet.

Pumpkin Pie Pudding

Easy to make and taste like pumpkin pie filling. Mine cooked in 5 hours 15 minutes. I ran out of pumpkin pie spice and had to add some cinnamon, ginger and nutmeg...came out pretty good. I liked it better warm than cold.
