Roast Chicken with Rosemary

Reviewed: Jan. 16, 2009
I needed a recipe where the flavors wouldn't interfere with a recipe that I needed the left overs for. I had a 7 lb chicken and used two onions and a bunch of rosemary sprigs. First time roasting a chicken with out butter or olive oil....pleasantly surprised by the flavor.

Patty's Mom's Black Bean Soup

Reviewed: Dec. 12, 2008
Great soup, I changed the cooking method and used my slow cooker. I added the ham bone, soaked beans, cooked onions & celery along with rest of the ingriendents to the cooker. I also added cumin and cayenne to the soup. Cooked on low for 8 hours. Pureed the soup with an immersion blender, a lot easier! Topped soup with cheese and crumbled tortilla chips.

Turkey Potato Casserole

Reviewed: Dec. 2, 2008
This was a great recipe for our Thanksgiving leftovers. I left out the onion and used seasoned butter corn and fresh chopped green beans. I had cream of potato soup on hand and added some half & half to thin it out. With the shredded cheese I added some taco seasoning and used cream cheese in the mashed potatoes! YUM!

Potato Cake

I added the cheese to the potato mixture and played around with the seasoning....one time with onion and another with bacon. I cooked each side for about 4 minutes on medium heat.

Pumpkin Chili

Unique flavor, I did not have tomato juice, replaced with tomato sauce. I only added 2 Tablespoons of sugar, it was enough sweetness for me.

Delicious! I baked this dish covered with foil for 50 minutes, the last 10 uncovered and let it "rest" for another 10.

Herb Chicken with Mustard Sauce

Reviewed: Sep. 7, 2008
We really liked this recipe. There was a lot of Mustard Sauce left over that we will most likely use for steak fries.

Mini Frittatas

Reviewed: Sep. 1, 2008
I grated 3 potatoes and squeezed out any excess water before cooking. I had skinless Polska Kielbasa that I chopped up and added to the potato mixture after 5 minutes. I was able to get 16 frittatas and were done in 20 min.

Butternut Squash Ravioli with Sage-Brown Butter Sauce

Reviewed: Sep. 1, 2008
I only used one wonton with a teaspoon of filling and folded into a triangle. I had a lot of filling left over that put into the freezer to make again. My Husband kept saying how gourmet this dish was.

Great Brownies! The only difference I made was the cocoa, I went a little heavier with 3/4 cup. Mine were done in 20 minutes.
