Turkey and Quinoa Meatloaf

I will never make meatloaf from beef again. This is that good. I actually had this recipe saved for a long time before I tried it, knowing that my husband hates quinoa. (Actually, he refuses to even try it.) But I made this yesterday and stayed true to the recipe, with the exception of adding one extra egg. It was wonderful. It's full of flavor and very moist. My husband loved it too, although I never did tell him that it contained quinoa. We had just enough left to make meatloaf sandwiches for tonight. If you're on the fence, give this recipe a try. There's a reason why it's received so many rave reviews.

Spinach Basil Pasta Salad

This salad was a huge hit with my husband. It's really good and I'll definitely make it again. I halved the recipe because it's only the two of us, but I should have made the whole thing because there were almost no left-overs. I did use bacon instead of pancetta, because that's what I had in my fridge. It worked really well. Once I cooked the garlic in the olive oil, I poured it over the chopped spinach and chopped basil, which softened it. I did use toasted pine nuts, although I didn't have quite enough in my fridge. I loved this salad.

Energy Balls

This recipe was a huge hit with my two adult health-conscious kids. It's like having dessert, but it's good for you! I used almond butter instead of peanut butter and I added 1/3 cup chopped almonds. I also used ground flaxseed instead of wheat germ, because that's what I had on hand. Throw in a TSP of chia seeds to add even more nutrition! I will definitely make these again.

Fresh Pineapple Upside Down Cake

This was wonderful! It will be my go-to recipe for pineapple upside down cake from here on. The only problem? I managed to spill half of it on my counter as I was attempting to put it on a plate. So it became pineapple upside down cake cobbler. No matter, the flavor was wonderful and my husband loved it too.

Almond 'You Must Be Nuts!' Crackers

So good! I love the nutty flavor and they're so easy to make. I followed the recipe but added 1 TSP of dried rosemary to the dough. (I love the taste of rosemary.) The only downside is that almond flour is expensive. But the crackers are great.

Homemade Black Bean Veggie Burgers

Ridiculously good! These are incredibly tasty and so easy to make! I love the spices, so I definitely didn't skimp on those. I did add 1/2 TSP salt and I used Sirachi chili sauce. I didn't use green peppers because I didn't have any on-hand. If you like spicy black bean burgers, you have to try this recipe. I took the advice of other reviewers and dried the beans before mashing them. Quickly gobbled up one and then froze the rest. This recipe makes four burgers.

Absolutely Ultimate Potato Soup

Great flavor! I made this today, in part because the weather is cold and snowy in Kentucky. It was a big hit. I did add a little extra garlic, because both me and my husband like it. And I added one TBSP of organic chicken base, which I recommend. I didn't need to blend it at the end; the texture was perfect.

Zesty Slow Cooker Chicken Barbecue

Yum! This is a very good recipe for chicken barbecue. I used four thawed, trimmed chicken breasts, Sweet Baby Ray's Hickory & Brown Sugar barbecue sauce, Kraft Italian dressing and a little less brown sugar than the recipe called for. I found that 5 1/2 to 6 hours on low was perfect. I'll definitely make this again; my husband also loved it.

Creamy Chicken Lasagna

Very, very tasty! My husband and I don't eat beef much anymore, so I decided to give this recipe a try. I gave it four stars because I did make some changes to the original recipe. I baked a whole chicken and shredded the meat. I also sautéed some mushrooms and onions, along with four minced garlic cloves. I used 1 TBSP of Italian herbs, mixed in with the cream cheese. And I chopped about two cups of fresh spinach and added those to the layers. I ended up using about 1 1/2 jars of spaghetti sauce, too. But it made a large 9X13" dish. Definitely a keeper!

Pepper Jelly Appetizer

Well, I had my doubts about this simple appetizer. But I made it anyway for Thanksgiving last year. I used red pepper jelly instead of green and placed assorted crackers around it. It was HUGELY popular. So I had to drop my high-brow notion that appetizers needed to be complicated. Do yourself a favor and try this.

Hearty Chicken and Noodle Casserole

Tasty and quick to put together. This is a great recipe if you're in a hurry one night. I did make a few changes, though. I added one small diced onion and a can of mushrooms. If I'd had the time, I would have made my own base rather than using a canned cream of mushroom soup. (I don't really like using canned soups and it's easy to make your own.) Still, my husband enjoyed this dish and it came together very quickly. For those reasons alone, I'd recommend it.

These were wonderful! My husband loved them too. I followed the recipe, only adding dried cranberries rather than raisins. Yummy! This is a great way to use up left-over pumpkin.

Loved this soup! So easy to make, too. I do recommend decreasing the amount of chicken broth to 2 cups, in order to maintain strong flavor, though. Will definitely make again.

Grilled Tamarind and Orange Glazed Chicken

This recipe is so tasty! Both my husband and I loved it. I served the chicken (which I marinated for 2 hours) over basmati rice and poured a little of the reserved marinade over the whole thing. Wonderful recipe.
