Peanut Butter Frosting

Great frosting. I made it with one cube of real butter and 1 1/2 Jiff peanut butter both at room temp., creaming them together, then I added the three cups of powdered sugar, one cup at a time, gradually adding the cream, (I used half and half). It turned out very fluffy and yummy. I just put it on a triple chocolate fudge cake from a box. It was amazing. My family loved it.

Salsa Chicken Rice Casserole

We make this all the time, it goes a long ways. My family eats it as a burrito though. I also make it easier by doing it in two pans. One I cook the rice in. The second I cook the rest in a skillet. I cube the chicken into bite sized pieces and brown them and cook them the rest of the way in the soup and salsa mixture. (I only use the one can of cream of chicken, no more is needed) It doesnt need all of the cheese either. I dont even add the cheese to the mixture. Add the cooked rice to the chicken and soup mixture. Put some of the mixture on a flour tortilla, add some cheese and fold it up. Sometimes we fry the burrito in oil and serve it with sour cream...yummy and easy

Microwave Lemon Curd

A little more sour than my family prefers...I think next time I would use less lemon juice...I had no problems whatsoever with the eggs cooking if done exactly as the recipe says to...

Pineapple Carrot Salad

Great recipe, except I changed a few ingredients. Sour cream for the yogurt. And instead of salt a tablespoon of mayo is just the trick. And unless you are going to eat it right away you dont need to soak the raisins they will plump overnight or even in a few hours in the mixture.

Fried Rice Restaurant Style

I made this tonight at the last minute to go with my pork chow mein I made...very quick and easy. My family doesn't care for peas so I finely minced up a few baby carrotts and about a 1/4 cup of red onion and added it to the hot oil...no need to boil the carrots that way....and I added a little of the ground pork I saved from my pork chow mein, it was just as good as any fried rice we have had at any restaurant...will make again for sure

Barbarella's German Pancakes

These are almost exactly what my German grandma used to make for us. We would eat them with butter, powdered sugar and lemon juice. It takes me back to a little girl, spending the weekend at my grandma's house.

Soft Oatmeal Cookies

These cookies remind me of the thick oatmeal raisin cookies you get at the grocery store bakery or Costco....yummy. They stay thick and chewy as long as you take them out early. My family loved them gone the first day I made them. I had to make more the next day, my husband couldn't get enough of them. I will definitely make them again.
