Curried Coconut Chicken

Very good. I didn't have canned tomatoes so I chopped three romas and added one 8oz. can of tomato sauce. My 3 year old said she liked it and my husband who is not a chicken eater also liked it. I will try with pork next time as one reviewer suggested. I had a side of white rice, carrots, and broccoli.

Easiest, Most Delicious Meringue Buttercream

I halved this and had enought to lightly frost 18 cupcakes. I also added cocoa powder and it was heavenly... I didn't have a thermometer to measure the temp I just put a small glass bowl over a medium stainless steel pot with simmering water until sugar and whites were hot to the touch and the sugar was dissolved. I looked online after the fact and found that you can pasturize eggs before cracking by placing them in a pot of water until it heats to 150 degrees. Look it up on your search engine I don't remember the amount of time you have to let them sit. Thanks for the recipe this is really good.

Mom's Chocolate Cake

The best chocolate cupcakes I have ever made. I only made half a batch and came out with 12 cupcakes. Baked for 20 minutes. I only used 1/2 coffee and 1/4 milk. Oh and I used butter instead. I used meringue buttercream frosting from this site to go on top and everyone loved them. Thank you.

Simple White Cake

This is a four and a half. I added 1/4 cup more milk. I used meringue buttercream frosting from this site ( I added cocoa powder to it for a delicious chocolate frosting) and they are very good. My niece wants them for her birthday party.

London Broil II

This was just ok. I did add balsamic vinegar and a little lemon juice to tenderize and I was just not too crazy about the flavor. Everyone ate it but my search for the perfect london broil recipe will continue.

Grilled Tri-Tip with Oregon Herb Rub

This review is just for the flavor of the rub. It is excellant! One change, just used garlic powder instead of garlic salt, personal preference. I use it on sirloin tip roast, bake at 500 degrees for 10 min per pound then turn oven off for an additional 10 min per pound, do not disturb, no opening to take a peek. Then remove and cover with foil and let rest 15-20min. Perfection everytime. And the juices produced....so yummy to dip the meat in. Everyone I have made this dish for loves it. Thank you!

Crazy Chocolate Cake

Yum. I mixed first in a large bowl and transfered batter into 5 small loaf pans. Baking time was right on. I added 2Tbsp of vinegar. I also added about half a cup of chocolate chips and increased cocoa to 1 full cup. All changes were made based off of other reviews. I frosted with Creamy Chocolate Frosting from this sight and my mother-in-law didn't believe that I had made it. Kids liked it too. Thanks
