Tortellini Soup I

Reviewed: Jan. 28, 2012
A friend brought this soup to one of our church small group get togethers and it was WONDERFUL! She used chicken broth, so I followed suit and did the same. I also couldn't find frozen zucchini anywhere and it is not currently in season so I used a frozen Italian veg mix that has carrots, zucchini, and red peppers...all of which are in the soup anyway and it saved me prep time! Score. :) Good stuff!

Taco Seasoning I

Reviewed: Jan. 28, 2012
This is a fantastic way to monitior and control the amount of sodium in your food...make the spice mix yourself! I altered it a tad by adding 1/8 tsp. cayenne, 1/4 tsp. chipotle powder, 1/4 tsp. garlic powder, and a splash if Sriracha sauce when you are cooking the meat and spices together. Delish!

Mild Curry Powder

Reviewed: Jan. 16, 2009
I thought it was very tasty and was relieved to find a make-your-own for this. I have purchased the jar kind...but don't think I'll be going back to that. I did add 1/8 tsp. of onion powder and 1/4 tsp. of cayenne (I like it spic-ay). :) Thank you so much for the recipe!!

Sugar Cookie Icing

Reviewed: Dec. 2, 2007
This is a really great recipe. :) I agree with other reviews and used vanilla extract instead of almond extract...but, other than that, this icing lived up to its description. It did dry very nicely and was very easy to make. Thank you for sharing this recipe.

Urban Legend Chocolate Chip Cookies

Reviewed: Jan. 22, 2005
These cookies are fantastic! I made them as a thank you gift for my neighbors and they called right after eating one and said they were very yummy. The ground-up oats make a very nice difference from other chocolate chip cookies. I did have to bake them for 12 minutes instead of 6-8. For something different, I grease a 9-inch cake pan and spread cookie dough out in that and bake until golden brown--about 15 minutes or so--to make a giant cookie. Nice for birthday treats or thank you gifts. :O) Enjoy! Will DEFINITELY make these again!

Apple-Cranberry Crisp

Reviewed: Dec. 21, 2004
This is delicious. At first I thought there was too much cinammon, but after it baked and was all bubbly and the apple and cranberry juices mixed with the cinammon, it was wonderful! The topping was perfect--I was out of nuts, so omitted them--and it was still good. I wouldn't change a thing. By the way, the recipe doesn't specify whether or not to chop up the cranberries, don't---they would almost disappear if you did---they sort of "explode" as they bake, and make wonderful juice--and still contribute to the texture of the dish. Delicious!!!!

Sweet Potato Casserole IV

Reviewed: Dec. 21, 2004
I prepared this for Thanksgiving and it was very yummy. I think I would add a bit more evaporated milk, maybe 1/4-1/2 cup more--it was not as moist as I would have preferred.

Caramel Popcorn

Reviewed: Nov. 5, 2004
This turned out perfectly. I have made the same mistake some other readers did by adding the baking soda before boiling instead of after, and yeah, a flop. :O) I made this for the treat bags for my son's 4th birthday and it was a hit. Thanks for the recipe. I will be making it again. I did change one thing. I did find the caramel quite thick, and thankfully found it was easier to thoroughly mix it into the popcorn while it was baking. I did only bake it for 30 minutes, as some others mentioned, and stirred once. Perfect!
