Kale and Quinoa Salad

This was much better than I even expected! I did modify it, but only a bit. I did not add nuts because I do not like them. Also, I didn't add the oil because I was out and it turned out not to need it! I only added about half the amount of dried cranberries (all I had) and chopped the kale to throw in with everything else. Also added some finely chopped red onion and diced avocado. It was WONDERFUL! Tasted even better the next day. I like to keep it in the fridge for lunch and it stays good for about 5-6 days. Healthy and yummy. Thanks so much for the recipe.

Lori's Famous Crab Cakes

Delicious! I followed the directions almost exactly, except I used dried parsley and 16oz crab claw meat that I shredded up. I also BAKED them at 375 for about 15 min. The first time I made them, I baked half and pan fried half, and my husband and I agreed the flavor comes out and the texture is much better baked. I spray the tops with fake butter spray about 3 minutes before I take them out and they crisp up nicely. These also make me about a dozen decent sized cakes, and reheat in the oven perfectly! Thanks for a great recipe! Highly recommend.

Special Lobster Bisque

Wonderful! I looked at the reviews and made some very slight changes based on them. I halved the recipe so my measurements will reflect that. I made my own lobster broth with the tail shells (added a bay leaf to the broth). I used skim milk and 1/2 and 1/2 for the 1/4 C at the end. It was still SUPER rich! I used 2 lobster tails which provided plenty of meat. My husband LOVED it and ate the whole thing. I got a teeny bowl which was fine because it was so rich. Great recipe and EASY to make! I think I would add some garlic and maybe even a little tarragon or something next time.

Absolutely Amazing Ahi

Very good! I made it tonight and it was a hit. I pretty much followed the recipe, except: I used at least 1/2 the soy sauce and about 1/2 the sesame oil. I found the liquid and flavor to be plenty. Also, I did not have sesame seeds and did not miss them. I added 2 avocados because my husband loves them. And I seared the tuna for about 10 seconds total but I think I might skip that step next time. Great!

Banana Nut and Ginger Bread

This is delicious! I modified it a bit to make it a little healthier, and it still came out wonderful. I used applesauce in place of the oil, half brown sugar and half splenda, and espresso in place of beer. (I halved recipe since it's just two of us.) I liked the full amount of cardamom, but my husband preferred a bit less. I added a bit extra ginger and no nuts (I never liked them! I know, I'm weird!). This is SOOOO good. Even my vietnamese mother in law, who is so picky and won't eat anything I make, stole half a loaf! I think I will add some candied ginger cut up next time, too! Thanks so much for posting this!
