Dila's Chicken-Stuffed Peppers

I liked this recipe. I used flavorful homemade shredded chicken and added canned corn and olives to the chicken-cheese-mayo mix. I also sprinkled both mozzarella and cheddar cheeses on top. The only thing I didn't like was how uncooked the bell-peppers were. If I repeated the recipe I would cook them a little before adding filling and baking. Makes a good meal if you cook some Spanish rice to go along with it.

Mini Pumpkin Butterscotch Muffins

Amazing!! I took these to 3 separate events over the last 2 weeks and every time they were a HUGE hit. Really good fresh out of the oven and even reheated for that warm soft muffin tastiness. For an extra decadent experience, smear a little cream cheese on them :)

The Best Parmesan Chicken Bake

Super easy and delicious! Will definitely make again! I basically halved the recipe by using about 1 lb of chicken breast tenders, halving the other ingredients and by baking in a 6 cup Pyrex baking dish.

Chuck's Favorite Mac and Cheese

This is a really good, subtly a-typical mac n cheese. Much more flavor depth than your run-of-the-mill box mac n cheese but still mild enough to please the picky eaters. I made a double batch, half as-written, half with the addition of ham, mushrooms and peas--both were tasty but I definitely prefer the version with ham and veggies.

Onion Quiche

I (basically) follow this recipe for my first time making quiche... It was wonderful! On the suggestions of other reviewers I added a 4th egg and 1/2 tsp baking powder. I also added finely chopped ham as I had some on hand that I wanted to use up. Even my man (who was skeptical of something called "quiche" lol) really loved it!

Baked Corn Casserole

I followed this recipe exactly and didn't like the result at all. Although I'm a big fan of all of the ingredients, when combined the dish just tasted strange. A weird mixture of sweet corn, tang from the chilis (no heat, which would have been better maybe?), and just a ton of onion flavor. And the texture was also odd. Won't be making this again.

Rice With Olives And Green Chile Peppers

The first time I made this dish I thought it was OK but needed something more. I agree with other reviewers, the sour cream was a bit overpowering. The second time I made this it was much much better! I doubled the rice, used less than the full 16oz container of sour cream and added shredded chicken (using this recipe: http://allrecipes.com/recipe/sarahs-easy-shredded-chicken-taco-filling/detail.aspx) to the sour cream, chiles, olives mixture. I layered 1/2 the rice, 1/2 the sour cream mixture, 1/2 the cheese into a greased 13x9 in pan then repeated the layers. I think the layering with the cheese on top keeps the rice more moist. Leftovers were excellent with crumbled corn or tortilla chips and some Tapatio mixed in!

Best Mac 'N Cheese Ever!

I've made this recipe twice and both times my man and I really enjoyed it. Plus it's easy. The first time I added some real bacon pieces (I think I used a whole package). The bacon was a good addition. The second time, I cut the recipe in half (the whole was too much for just the two of us) and used a 6cup baking dish which worked well. Also, I used cut-up pepper jack cheese instead of the shredded cheddar/jack cheese blend which made the recipe even better! For anyone who likes a little kick, I definitely recommend using pepper jack!!
