Chef John's Irish Stew

Well, as it were Saint Paddy's day today, I thought I'd give this recipe a wee bit of a go. Honestly, I'd rate it 5 stars for the smell it gives off in the house alone. My husband kept saying "Sure smells good," and I think we were all drooling heavily by the time the first 1 1/2 hours was up! I made it exactly as written and had the Amazingly Easy Irish Soda Bread to go with. Unfortunately I added too much water, so it was a bit like a chunky soup, but still incredibly flavourful and the lamb was amazing! My husband said "this is good," three times! Thanks, Chef John! Now I'm going to curl up with a small glass of Irish whiskey and watch my kids clean the kitchen! Happy St. Patrick's Day!

Firecracker Grilled Alaska Salmon

Oh wow! Awesome!!! My husband, who doesn't normally rave about recipes, is raving about this one! I didn't marinate it as long as I should have (should have read the recipe in advance), but it was still sooooo flavourful, even after only marinating an hour. I'm going to try marinating overnight next time, like suggested, because this recipe is definitely a keeper!

Lemon Cream Pasta with Chicken

I loved this recipe! I really loved the zingy lemony flavour with the creamy pasta garlic chicken combination! SOOOO delicious and incredibly easy! Made it as is, with the exception of the pasta because I couldn't find the rotelle. Used penne rigate instead. The only comments from my family, were: needs more sauce; it's too lemon-y. I may try to accommodate my husband by making it even MORE creamy next time, but I found the amount of lemon just perfect. We'll be making this one again.

Asian Beef with Snow Peas

My husband, who is quite picky, really likes this one. After reading the reviews, I, too, doubled the sauce and am glad I did. I added 1/2 tsp of crushed chili pepper to the sauce because we like our foods a bit hot. Also added a couple carrots, a red bell pepper, and scallions. Will make this again!

Cyndi's Shrimp Fajitas

Really good! Did what others recommended and added 1/2 tsp of cayenne to the marinade and then a sprinkle of cumin and some lime juice to the veggies (instead of zucchini, I used 1 can of black beans and 1 red pepper) and added chopped tomatoes at the end. I may increase to 1 tsp of cayenne for even more zing next time! We'll be making this again! Nice and easy to make.

Banana Muffins II

Fantastic and so easy!!! I also added 1/4 c flax, 1 tsp vanilla & 1 c chopped walnuts. Had to cook them a bit longer than 15 min, but soooo delicious & moist!!!

White Chocolate and Cranberry Cookies

Wonderful recipe! I did it exactly as written, with the brandy, and the cookies are fabulous with that nice hint of brandy, the sweet chocolate and the bit of tart from the dried cranberry. So Yummy!

Homemade Mac and Cheese

A family favourite!! I add a bit of cayenne into the breadcrumbs and a bit of S & P and it gets gobbled down right away. Also it's so easy to make that I can even do it in the morning before school and then the kids get a really nice hot lunch!

Slow Cooker Butter Chicken

Very flavourful(Canadian spelling! Haha!) and I found it so easy to make! I was able to throw it together quickly before I went to work and then, after a day of work followed by swimming lessons with the kids, we came home to a warm and very tasty dinner! I too have had a love/hate with the slow cooker (the recipes I've tried tend to be bland) so this recipe will definitely be a keeper!
