Barbecue Chicken Wings

I wasn't a fan of this recipe. I double-checked the sauce ingredients to figure out what I could've done wrong but I measured everything exactly and the sauce just tasted weird and too sweet. It didn't taste like bbq; it tasted too strongly of ketchup. If I ever made it again, I'd definitely leave out some ketchup. It also wasn't spicy at all, and I had even added extra hot sauce. Instead it just tasted peppery. My husband liked it, though, so I'll give some stars for that.

Chickpea Falafel Burgers

This recipe is amazing! I had never made falafel from scratch until trying this out, and it exceeded my expectations. I didn't have cilantro or curry powder on hand so I left them out, but it was still great without them. I also broiled the patties in the oven with brushed on vegetable oil rather than frying. They got nice and crispy with less fat required! I then stuffed the patties in pita pockets with sliced cucumber, tomato, avocado, and fresh spinach with a lemon tahini dressing. DELICIOUS. I will definitely make this meal at least a few times a month from now on! Even my meat-loving husband loved this vegetarian recipe!

Slow Cooker Chicken Stroganoff

This dish was awesome! However, I did adjust the recipe in several ways with suggestions from other people. This was my creation: Start with 2-1/2 cups of frozen veggie mix (broccoli, green beans, onions, and mushrooms), 3 breasts of chicken (cubed), 1/2 a packet of Italian seasoning, 1/4 cup of water, and 3 tbsp of margarine all in a crock pot on low for 3-4 hours. Then add 1/2 cup of light sour cream, 4 tbsp of light cream cheese, and 1 can of both low sodium/low fat cream of chicken and cream of mushroom soup. Stir it all up and let cook for another hour. (Add a little bit of water if too thick.) Because I had broccoli in there, it actually came out with a little but of a broccoli cheese flavor, but my boyfriend and I loved it! Much recommended recipe.
