Stuffed Mushrooms with Spinach

This was fabulous! I omitted the butter and sauteed the spinach in bacon drippings. Also, I used spinach and chard as I didn't have enough spinach. I pureed the filling so it would be easy to fill the mushrooms. I dirtied lots of dishes, but I think the result was worth it.

Sweet and Sour Chicken II

The sauce was PERFECT! The reason I rated it 4 stars is because we don't care for celery. We used 1 red pepper, 1 green pepper, and a head of broccoli with 1 lb. of chicken. We also used crushed pineapple instead of chunks because that's what we had on hand. Served it over brown rice...Delicious! I plan on adding this to our regular menu rotation. Thanks, Sal!

Grilled Eggplant Moussaka

While this was ENTIRELY DELICIOUS, it took FOREVER to prepare. If you have all day to spend in the kitchen, this is a winner! If not, make something else.

Mie Goreng - Indonesian Fried Noodles

Way too salty! It's a good start, but I think the soy sauce could be eliminated entirely. I timed the noodles exactly, and they came out too soggy, so I think the cooking time for those could be reduced significantly. We used shrimp instead of chicken (adding at the end because they cook quickly). Also, I did sub garlic powder for garlic salt...still too much salt.

The marinade is pretty good, but it didn't taste particularly "Greek" to us. Also, the Tzatziki sauce isn't quite right.

Slammin' Salmon

EVERYONE in my family LOVED this! (Yes, even my 6-y-o and my 2-y-o) My DH subbed 1/4 tsp. peanut butter and 1/2 c. olive oil instead of the peanut oil. (We like the peanutty taste, but we only keep olive oil and coconut oil on hand). Everything else was exactly as written. This is our go-to salmon recipe.

Cranberry Streusel Loaf

While this bread is delicious, I think it would be just as good with half the streusel topping. As it is, it's very crumbly...tasty, though.

My family LOVED this!!! Now I know how to get my kids to eat spinach. lol. The only thing I didn't like about this recipe was that it makes a LOT, so be prepared. I would definitely recommend it, though. It's PERFECT!

Grilled Fish Tacos with Chipotle-Lime Dressing

Let me say that the SAUCE IS AWESOME! However, my family didn't care for the marinade/fish. Also, to make things easy, I used prepared broccoli slaw for topping instead of the cabbage.

Jimmy's Mexican Pizza

This is delicious! The only reason I rated 4 stars instead of 5 is because I use Taco Seasoning I with my ground beef, and I use a can of black beans, drained, rinsed and pureed in the food processor with a can of Rotel (green chilies and tomatoes). Thanks for a great creation! I appreciate its versatility. :)

Baked Teriyaki Chicken

Wow! I'm never buying the bottled stuff again! Thanks so much for a delicious sauce that comes together perfectly! My 5-year-old LOVED the stir fry on which we put this sauce. We also use low-sodium soy sauce, but it's still fabulous! Definitely a keeper!

This salad is wonderful! Exactly what I was looking for! I decrease the oil to 3Tblsp. and use Oriental-flavored ramen noodles instead of chicken. My 5-year-old LOVES this and so does my husband!

Meatloaf...a Little Southwest Style

Made this last night for the fam and they ALL loved it! It was nice and moist. I think next time I might only use 1 egg. Also, I omitted the onion since the salsa I used was pretty chunky. I used onion powder (~1tsp.) and garlic powder (~1Tblsp.), also. This is TOTALLY going in my recipe box!

Mustard Crusted Tilapia

This was delicious! Our entire family thoroughly enjoyed it. The fish was perfectly flaky and all the seasonings combined beautifully! We served it with asparagus and garlic mashed potatoes...a perfect meal.

Quick Black Forest Cake

Fabulous! Super-rich, though...must serve it with real whipped cream for the full effect. I just made the cake without the icing and it's SOOOO good! Also, I only used 2 eggs, and it came out fine.
