Spicy Baked Sweet Potato Fries

Excellent - great way to use sweet potatoes and cut the fat. Will try the creole seasoning or cajun seasoning next time.

Broccoli Tomato Salad

This was very tasty - I made substitutions based on what was in the refrigerator - no mushrooms which I will try next time, added diced celery instead of celery seed, diced red onion, and Roasted Red Pepper Italian dressing because it had the soy oil, lemon, and vinegar in the ingredients, no sugar, and sprinkled the seasonings to taste and chilled. I will make this again.

Pasta With Tuna Sauce

I tried this out of curiosity - did not have capers and added 2 T. minced garlic in oil and the basil, oregano, and garlic diced can tomatoes, with asiago, romano, and parmesan cheese sprinkled on top. I would make this again. There are just some days when you need it this quick and easy.

Black Bean Salsa

I used 4 Roma Tomatoes, 1/2 diced red onion, regular corn, 1 squeezed lime, cumin, chili powder, and herb garlic seasoning with less than 1 T. of minced garlic in oil. It still needed something so I added the canned diced tomatoes. It seemed to need the juice from the canned tomatoes.

Tomato Cucumber Salad

I made this similar to VHAFT99 added a small amount of minced garlic in olive oil, a few drops of Italian dressing in extra-virgin olive oil, basil, parsley, and herb seasoning along with a freshly squeezed lemon. I think the lemon gave a real fresh taste and blended well with the seasonings.

Simple Marinara Sauce

This was simple and good which was what I wanted. I did not have tomato puree and Romano so used tomato sauce and Parmesan. It's great when the recipes call for items in the pantry.

Baked Salmon II

Very good. I reduced the olive oil and used 2 tablespoons of the minced garlic in olive oil per other reviewer's suggestions. I also substituted 2 teaspoons Mrs. Dash original for the salt and pepper.

Cheesy Sausage Zucchini Casserole

I used what I had on hand and used some of the other reviewers suggestions: Boca sausage, a package of white and wild grain rice, 28 oz. italian canned tomatoes, a red bell pepper, 2 yellow squash and 2 zucchini, and a mixture of low-fat mozzarella and asiago, romano, and parmesan because that's what I had in the refrig. I cooked it in the slow cooker because I had errands. I think I will use the low-fat turkey sausage next time.

Roasted Red Pepper and Tomato Soup

After reading the reviews, I added more spices to this - basil, oregano, Old Bay, parsley, and some Mrs. Dash original per taste. Also, 1/8 cup of potato flakes and 1/2 cup soy milk. I boiled 6 medium size tomatoes and then peeled them and pureed in the food processer which measured almost 4 cups. I used 4 cups of water with chicken bouillion granules. I only had one red pepper which I chopped and sauteed in oil with the onion. Very good.

Vegetable Medley I

I did not do this in the oven. I added a pkg. of long grain and wild rice with herbs (pre-cooked), pureed the can of diced tomatoes with the basil and oregano, and omitted the cheese and cooked in a nonstick skillet. This was even better as leftovers.

Spicy Fish Soup

I accidently spilled the cumin into the soup so there was considerable more in mine than per the recipe. I ommitted the chile peppers, substituted scallops for the cod, and pureed a can of stewed tomates to add. Very easy and tasty.

Garlic Salmon

This was excellent - very moist and flaked easily with a fork. I sauteed about 5 slices of diced onion in olive oil with additional minced garlic and poured on top of the salmon. I baked in the oven - very easy.

Black Bean Vegetable Soup

This was absolutely heavenly. I did not have corn or carrots so I added a chopped green pepper. I also pureed one can of basil oregano stewed tomatoes with the black beans. I used the dry beans rather than canned and substituted the Wyler's Chicken, Garlic and Herb Buillion with water for the vegetable stock. Will try adding hamburger, turkey sausage or pecan smoked sausage next time.
