Yummy Honey Chicken Kabobs

I used for a stir fry and it came out wonderful. Only change I made was to add chopped fresh ginger to marinade, then stir-fried it with day old rice and frozen broccoli/carrots. Loved it!

Polly Welby's Excellent Chocolate Mousse

My only complaint was that the melted chocolate did not incorporate well into the whipped cream. Flecks and chunks remained, although my husband thought it was good that way. I think that if the melted chocolate was warm (not cool) and very slowly drizzed into the cream, then it would have mixed together better.

Curried Coconut Chicken

Wonderful flavor and easy to prepare. Used skinless chicken thighs. A bit too liquidy, but just simmer without the lid for about 30 minutes to reduce.

Gluten-Free Yellow Cake

Rather than xanthan gum (way too expensive!), can use guar gum (runs $4.99/lb in my area and can usually buy small packages for under $2 at health food stores). Cake turned out fine, except my batter was thin and I had to pour it rather than spread it!

Flourless Chocolate Cake II

Absolutely wonderful! Dark, dense, and fudge-like. Substituted almond extract for vanilla and made six large cupcakes. Best cake ever!

Irish Soda Bread I

I must admit that I made a few changes. Due to a wheat allergy, I used 2 cups brown rice flour, 1 cup soy flour, and 1 cup wheat free gluten free baking mix. I was out of sour cream, so I used 2 cups cottage cheese mixed with 2 T milk and 2 T white vinegar. The mix was a bit too dry, so I added a bit more milk for moistness and baked in two 8 inch cake pans. The bread was sensational, and no one knew that I didn't use all-purpose flour!

Awesome aroma, awesome taste. Used 1/4 teaspoon ground cloves and 1/4 teaspoon ground cardamom instead of the cloves and pods and came out great. Paired it with Indian Style Basmati Rice from this website and what a meal!

Egg and Cheese Puffs

I was disappointed. I used ground pork sausage but it still wasn't flavorful enough. Plus, they didn't rise at all (maybe cottage cheese too heavy?). Although I used paper liners and sprayed as well, much of the puffs stuck. Might try again but kick up with seasonings (thyme,pepper,sage,garlic) and use less cottage cheese.

Local Kine Wontons

Terrific recipe! Rather than crabmeat, I used chopped, pre-cooked shrimp with minced celery. And I used way less than the oil called for. I pan fried them one side at a time. They came out great and I didn't waste any oil!

Butternut Squash Bisque

Good basic recipe! I like my soup more flavorful so I added 1 teaspoon of yellow curry and 1/2 teaspoon cinnamon plus a dash of nutmeg, salt, pepper, and sugar to taste. Tasted like soup from a 5-star restaurant!

Best Ever Muffins

These muffins are great! I reduced the flour to 1-1/2 cups and added 1/2 cup ground brown flaxseed. Also reduced the sugar to 1/2 cup. Batter seemed a bit wet, so I then added 2 T additional flour then finished off with 1 cup blueberries plus 1/2 cup blackberries. They raised nicely and baked golden brown in 20 minutes. (Try adding ground flaxseed--it adds a slightly nutty crunch and is very healthy!)

Zucchini Patties

These are wonderful...although I did make a few changes...After shredding, I patted excess water out with paper towels. I added cornmeal (for crunch) and bread crumbs along with the flour. I also added shredded carrots (for color) and chopped fresh parsley, along with grated romano, cheddar and mozzarella cheeses). I skipped the salt and used pepper. I formed patties then added additional bread crumbs/cornmeal to get the right consistency. I patted additional breadcrumbs on them before browning in olive oil. With the three cheeses and additional changes, they were packed with flavor.

Spiced Yogurt Pound Cake

I thought...this one has to be a winner, with five stars and positive reviews. Wrong! The only change I made was to make this recipe in loaf pans. The cake tested done after an hour but was raw and heavy inside. The flavor was good, and the exterior nice and brown, but the interior was raw. I've always used loaf pans and 9x13 pans interchangeably, so I blame the recipe.

Greek Chicken

Delightful dish! Rather than a cut-up chicken, I used this recipe for cornish game hens. I did everything the same, except after marinating the hens overnight, I put them in my crockpot on low for 8 hours with about 1/4 cup of chicken broth. I finished them off by broiling them for 8-10 minutes so they would have a nice brown skin. The meat was so moist and flavorful, it fell off the bone. I'm a big fan of the crockpot, and this recipe worked well.

Japanese-Style Deep Fried Chicken

Wonderful flavor! Instead of potato starch, I used instant potato flakes, and also used regular flour instead of rice flour. I even omitted the chicken granules. Still turned out excellent. Will be making this often.

Barbecued Beef

My fam prefers to taste the meat first, so I omitted adding the sauce during the roasting and opted to serve it separately on the side. (The meat was easier to clean since it was sauce-less.)I did use just a touch of the sauce to moisten the meat before serving. With sauce on the side and a bowl of cold coleslaw, it made an easy and tasty dinner!
