Coconut Date Bars

These are GREAT! So addictive, and a great substitute for expensive energy bars. I didn't add the coconut oil, but I did throw a few chocolate chips in, and they turned out wonderfully! I used a small food processor (it holds like two cups) and pulsed and ground the heck out of it until it was starting to stick together and ball up in the processor. Be patient, it took at least 60 two-second spins. Maybe the people having trouble with the recipe are using different dates? I used boxed, unpitted medjool dates, which are pretty sticky. I also spread the mixture between two pieces of parchment paper and really pressed it together. I'm off to make a second batch with some different nuts! Thanks for the keeper, Lacy!

Black Bean Brownies

I made these as specified, and they turned out pretty good! More like a sort of flat, flourless chocolate cake than a true brownie, but very moist and light. Not surprisingly, we totally got the toots from these. Be prepared. Not good for a car trip ;)

Pineapple Chicken Tenders

I had a few extra things on hand, so I threw a little garlic, ginger, lime juice, and sesame oil into the marinade, then after marinating, placed the chicken on the Foreman grill for two minutes and thirty seconds. I boiled and reduced the marinade, and it made a great sauce! I served this with diced mango and kiwi, sprinkled with a little triple sec. Thanks for the keeper!

Ten Minute Enchilada Sauce

Flatlander Chili

Excellent, lighter chili! I like tomato pieces, so I used two (29 oz) cans of crushed tomatoes, two small cans of tomato sauce, and half of a beer instead of the tomato juice. I also used one pound of ground turkey, and half a pound each of ground sirloin and ground pork. Just what I was looking for...thanks so much!

Roasted Pork Loin

Delicious! I added lemon zest, and cooked two 1 pound loins side by side in a 9 x 13 baking dish. It only took 40 minutes to hit 155, so be careful! I threw them on the grill for 2 minutes/side after they came out of the oven for an extra dose of flavor. Great recipe!

Asparagus Cashew Rice Pilaf

FANTASTIC! I used less butter, roasted the nuts with paprika and cumin, and added a squeeze of lemon juice. I also used chicken broth instead of vegetable broth, because that was all I had on hand. I followed the directions to a tee and it came out delicious! Thank you!

Chicken Piccata II

WOW! Everybody LOVES this recipe! I add lemon zest to the flour mixture. For the sauce I use 3/4 c water, 1.5 bullion cubes, 1/4 c dry vermouth, and whatever the lemon will give me. I thicken it up with 1t corn starch at the end. Thanks for the keeper!

Spicy Sweet Potato and Coconut Soup

What a hit! This soup smelled so good while it was simmering, my husband wanted to dive right in the pot! I used low-fat coconut milk, grated the ginger on a Microplane instead of slicing it, and used a box of chicken broth instead of veggie broth. I used an immersion blender to halfway puree it, but also left some pieces of potato for a nice texture. Thanks for the recipe---we all loved it!

Apricot/Cranberry Chutney

I made a few changes: used 1/4 cup vinegar instead of 1/2 cup, added 1/4 cup orange juice, and used about 1 cup of mixed dried fruit (raisins, peaches, apples, apricots). Turned out great!

Yum-o! Just what I was looking for! I also used a jar of Spaghetti sauce because I was in a big rush, and left out the cottage cheese, but the noodle "crust" was the one I had made before and lost the recipe. Thanks!!

Beef Pinwheels

Outstanding recipe! This was my first experience with flank steak---I'm sold! I pounded the entire steak, then sliced the strips, then pounded each strip to a nice uniform consistency. Otherwise, I followed the recipe letter for letter. These have a wonderful flavor, and came out super-tender! These little guys do shrink to about 2/3 of their original size, which was great for me because all of that meat looked a little challenging for two people. Thanks for an interesting new recipe!

Pumpkin Roll Supreme

Best Ever Banana Bread

Loved the pecans--this really IS the best banana bread ever! The ONLY thing I changed was the cooking time---it only took about an hour for the bread to bake. YUM! I made it into french toast!

Cheesy Potato and Corn Chowder

LOVED it! But since I'm sensitive to MSG, and couldn't find a country style gravy mix without it, I cooked bacon in the soup pot, drained most of the fat, sauteed the veggies in the fat (instead of margerine), then used regular gravy mix. I also added carrots to the potatoes and crumbled the bacon on top! WONDERFUL!

Black Bean Cigars

An interesting twist on boring old burritos. I used low fat sour cream and added diced chilis, and toasted the tater-tots before adding, and they were perfect paired with a cup of potato corn chowder (also from this site). They microwaved surprisingly well the next day too--still crispy! Thanks for the fun recipe!

Maryland Crab Cakes III

My fiance floats into the kitchen, cartoon-style, when he smells these! I have made them many times, and they always come out GREAT! I have even used canned crab (three small cans, drained) instead of fresh, and they come out fine! Usually, I make them with half Saltine crumbs, half breadcrumbs, and lite mayo. I also put a little fresh parsley in if I have it. Always delish! Thanks!
