Chili Sauce Chicken

Good, but not as fantastic as I'd hoped based on the past reviews. I used chicken breasts, not thighs because I'm not a fan of dark meat. Baked in the oven because it was too cold to grill.

Simple Spinach Lasagna

Even hardcore carnivores may not notice that this is meatless. Simple recipe, easy to prepare. I made my own marinara sauce rather than buying a jar and it made it even tastier. I usually make 2 batches at once and then freeze the extra one for later.

Corn Dog Casserole

Very retro and extremely tasty. I added a can of corn and left out the sage because I didn't have any on hand. Serve with tater tots for an old school meal.

Italian Spaghetti Sauce with Meatballs

What can I say that hasn't already been said by over 1,000 reviews! I've made this many, many times after finding it on this site. A few changes that I've made: add milk to the meatball mixture, it'll make them more flavorful and lots of fresh basil. I try to make this the night before so the flavors have time to "set." Use any extra meatballs with a little sauce for meatball subs too!

Crunchy Chicken Fingers

This recipe was delicious. I used Tostitos tortilla chips "with a hint of Pepper Jack." I also broiled them for a minute or so at the end so they were cripsy. I'm adding this to my regular dinner rotation.

Butter Beef

This was delicious, inexpensive and definitely easy to prepare. I took other reviewer's advice and seared the meat and added about 1/4 c of sauted onions that I just happened to have on hand. I served it with egg noodles and my family was very pleased.

Eggplant Parmesan II

This recipe is amazing. I followed other's suggestions and sweated the eggplant before cooking and I detected no bitterness. I also cooked it at a higher temperature - 400 for 14 minutes per side and it was nice and crispy without being burnt. I've never cooked with eggplant before and was worried when I cut into it and saw seeds, but it didn't seem to affect the taste. I used Prego Organic basil and tomato sauce to save time rather than making my own sauce.

Sweet Russian Cabbage Soup

This is a great recipe and reminds me of a delicious soup that I've found at an out of town Jewish deli. I followed the recipe exactly, except for adding a little additional sugar and vinegar. You can also use sugar and sour salt to replicate the tangy taste.

Minestrone Soup I

This soup was very good. I made a few substitutions -- added kidney beans, frozen spinach, beef bouillon, and a entire small can of tomato paste. (I left out the cabbage and other beans.) I also sauteed the carrots and onions in olive oil rather than butter for more flavor.

Butternut Squash Bisque

Great recipe. I followed other's advice and cooked the squash in the oven while chopping the onions and carrots. I thought it was very rice and didn't need any 1/2 and 1/2.

Chewy Chocolate Chip Oatmeal Cookies

These cookies are very, very good. I substituted chocolate covered raisins for the chips and left out the walnuts. I also used 1/2 butter and 1/2 Crisco, which makes them softer and chewier. Great recipe!

Roasted Chicken with Risotto and Caramelized Onions

I really liked the combination of caramelized onions and thyme, but my boyfriend thought it was "too strong." I might try it again with less onions. It also took me a lot longer to add the 7 cups of stocks -- I gave up after 6 and the consistency was still good.
