Hi, I'm Laura! I'm a single mom and I work full-time in the Information Technology field as an analyst. I LOVE to cook, but my time is pretty limited and my most frequent dinner companion (my 2 year-old son) maintains a strict diet of PB&J, bananas and yogurt.
My favorite things to cook
I love to cook Italian meals and bake desserts, especially cookies. Often times, I make an extra portion that I freeze to serve at a later date.
My favorite family cooking traditions
My family celebrations are all held at my parent's house and every year, we eat the EXACT same dishes with a few substitutions. For example, every Easter it's baked ham, sweet potato casserole, soccer salad and fruit salad. Each family member makes the same dish too!
My cooking tragedies
For Christmas this year, I planned to make a chocolate Kahlua trifle. I baked the cake the night before and was planning to assemble it on Christmas Eve so the flavors had time to set before it was eaten the next day. I was carrying the cake across the kitchen when I tripped and literally threw it across the kitchen. There was chocolate cake and glass shards everywhere and no trifle for Christmas. At least it made my family laugh.

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)
For years, I've struggled to make hard boiled eggs that don't turn out mushy or green. This recipe works! Followed it to a "T."

Simple Spinach Lasagna
Even hardcore carnivores may not notice that this is meatless. Simple recipe, easy to prepare. I made my own marinara sauce rather than buying a jar and it made it even tastier. I usually make 2 batches at once and then freeze the extra one for later.

Corn Dog Casserole
Very retro and extremely tasty. I added a can of corn and left out the sage because I didn't have any on hand. Serve with tater tots for an old school meal.
