Magic Cookie Bars II

Tips: Mix crumbs with butter separately. Consider doubling crumb mixture for thicker base. I also felt that 1 cup of coconut flakes was plenty. Bake until flakes are toasty.

Stuffed Pattypan Squash

So tasty! I only made one small change. I added shredded mixed cheese to mixture. I will note that I used a 3 inch wide patty pan and I cooked it for only 5 min in the water, then 20 in the oven. My squash did not turn out mushy at all this way. As far as portions for 1 squash...I used 2 tbsp of onions, 1 slice bacon, 1 tbsp breadcrumbs, abt 1/4 c shredded cheese, about 1 tbsp parmesan and it looked like about 2tbs of the scooped out squash. Oh, I did put in a pinch of minced garlic, pinch of salt & pepper. This was perfect for 1 serving. It was delicious!

Beer and Brown Sugar Steak Marinade

I felt the beer taste was too prominent, over powered rest of ingredients. When I reduced it in pan, it overcarmelized...and became quite sticky within a couple of minutes....be sure to not put flame on too high and you must drizzle over meat and serve Asap!!!

Steak Salad

The dressing is tasty. I ended up adding a bit more red wine vinegar and only used 1/4 c olive oil bc it tasted a bit too oily for me. I used petite sirloin steak and seasoned it with salt, pepper and garlic powder -just a pinch of each.

Yum! I would follow the advice of others that said to add extra butter so that the mixture is not as dry and loose. Other than that, it was a 5 star recipe!

Breakfast Enchiladas

In order to prevent the tortillas from getting soggy, I "toasted" them on a pan. Then, ran them trhough the enchilada sauce. I used corn tortillas, as well. I did two at a time and sprayed a bit of pam before each. I also made this as more of a casserole, than rolled up tortillas by laying them flat like lasagna. I also added egg, like many other suggested. Gave this a 4 because I ended up making my own enchilada sauce and the diced chilis were not necessary b/c my sauce was packed with lots of flavor. The concenpt was great!!

Classic Hash Browns

Super easy and tasty! I think the cayenne & paprika are optional. They tasted great with just salt & pepper. I didn't shred mine. Instead, I diced them up real small. They took longer though. (About 30-35 min.)

Sour Cream Pound Cake

After reading alot of the reviews, I took the following suggestions: 1. I DOUBLED the recipe and used a bundt pan, plus... 2. I added 2 tsp vanilla extract 3. I added 2 tsp lemon juice, freshly squeezed 4. I added 2 pinches of salt 5. I Lowered temp to 350 and baked for exactly 60 min. for doubled batch (check it early though, depending on your oven can be done within 55 min. )

Jamie's Cranberry Spinach Salad

I made this salad/dressing as is and gave it 4 stars. The only reason I didn't give it 5 stars is because I felt the dressing called for too much sugar. So, I would recommend either half the sugar called for, or maybe a little over half, depending on your taste. I would also make the following slight adjustments: Use shallots instead of minced white onion, blend the dressing ingredients together in a blender (except for sesame and poppy seeds), then add the sesame and poppy seeds to the salad, itself. With those adjustments, I would definitely make this dressing again!

Great tasting base! I made substitutions to make it healthier. I used 3 large fresh oranges, 1 cup lowfat milk, 1 1/2 cups nonfat plain yogurt and 2-3 T of agave nectar. The recipe doesn't specify the amount of vanilla extract. I used 1 tsp.

Napa Cabbage Salad

I'm primarily rating the crunchy topping and veggies bc I changed the marinade/dressing quite a bit (as I had different oils/vinegars on hand and I wanted to avoid the sugar for dietary reasons. So, I omitted the sugar, added chili powder, used sesame oil in lieu of veggie oil and rice vinegar and lime in lieu of cider vinegar.The crunchy topping is a great topping to any salad, cooked collared beans, spinach, sprouts, etc..

Kongnamool (Korean Soybean Sprouts)

These soybean sprouts were delicious. The chili sauce/paste was a bit too smoky, but I didn't knock off any points to my rating bc I used regular chili poweder in lieu of Korean chili powder (as I didn't have the Korean type on hand). This might have made a difference on the smokiness. I balanced it out with the juice of 1 lime and a splash of rice vinegar. (I also followed previous posters' advice and lessend the amount of sesame oil. The paste/sauce was quite tasty when mixed in with the sprouts. The recipe as is was deserving of my 5star rating. However, I chose to add something crunchy: I sauteed raw top ramen noodles, slivered almonds and sesame seeds with butter on a skillet and then toasted them in the oven. I crumbled them up over the sprouts and it was just the right touch.

Vietnamese Fresh Spring Rolls

Great spring roll. Its very fresh, super healthy and 2-3 of these could be a full entree. Great option for the health conscious! Even though it has vermicelli, its such a small amount in each roll that its still low carb. I used bib lettuce and also added shredded carrots and diced jalapenos. I also omitted the mint.

Easy OREO Truffles

Easy Hawaiian Chicken Packets

THis was surprisingly good! I made "one big packet" due to time restraints. I used chicken tenders instead of breasts and also added ginger powder. I put all ingredients in a baking dish and covered it with aluminum foil, then baked it in the oven.
