I have to agree with a prior post, no true Southerner puts sugar in the cornbread. I always use a tablespoon of left over bacon grease I collect in a canister specifically made for grease that strains it. Heat it until it's starting to steam or it sizzles when you flick a drop of water in it. Pour the grease over the cornmeal mix, stir, then put back into the pan while it's still hot, this makes the nice browned crust, then put it into the oven on 400F preferably. I always use buttermilk as well. If I want to make the cornbread sweet, I don't use sugar, I use honey. There are also a bunch of different variations I do with the flavors that can be added. This recipe above is a Northernized version.
