Lentil Soup
This recipe is a staple in my kitchen! I make it quite often and it never dissapoints! I tried it for the first time in my crockpot yesterday and I basically threw all the ingredients in the crockpot all together, cooked on low for 4 hours, then switched to high for another 3. The only reason I did that was because I found the water was not absorbing well enough on low. So it would probably best to start it on a high setting for about 4 hours or so depending on your crockpot. It was just as good as when I make it in the pot. Not only is this lentil soup super healthy, but the recipe makes quite a bit so I can have lunch made for the next few days. I add a bit more vinegar than the recipe calls for right at the end because I like the tangy taste of the vinegar in the soup. I also don't bother adding the spinich, but no reason why you can't! Turkey and Quinoa Meatloaf
AMAZING!!! Just made this tonight. Not only it is the best meatloaf I have ever made, it was the best meatloaf I have ever had! I did a couple very slight modifications. I added an extra egg, about a quarter cup to half a cup of breadcrumbs to bind the mixture, and instead of tomato paste I used ketchup as I noticed most people did that as well. My husband went back for seconds it was so good! The topping really added a burst of flavour. Even my 2 year old ate it, and it is difficult to get him to eat anything these days! Didn't seem to have any issues with this dish! I know he is getting the healthy quinoa and the turkey, so it made me feel good as a Mom! I found the meatloaf to be moist and didn't lack any taste in the least! It was bursting with flavour. I will make this over and over again, only difference is I would double the batch so we can eat more of it!!
