Fried Ice Cream

This was d-lish! I served the ice cream in a tortilla that I had coated in cinnamon and sugar, and baked into the shape of a bowl. Used a combo of cornflakes and graham crackers for the coating. Will be making this again!

Amazing Mussels

This was a hit with my family for our St. Valentine's Day dinner last night. Only adaptations I made were to use canned diced tomatoes (drained) I used red pepper flakes, and I made the sauce the night before. Will be added to our regular rotation!

Kathy's Delicious Whole Slow Cooker Chicken

Recipe was a hit for dinner. I made a few alterations. Used about a 5 lb. bird. Doubled all of the liquid ( & garlic) except for the oil. I followed the other reviewers suggestion and put a quartered onion in the cavity. I also didn't waste the time struggling to get the skin off of the wings. I will shorten the cooking time next time I make it; he ended up to be a little dry. Following another reviewer's suggestion I used the juice from the crock-pot as the liquid for my rice, it was really good also.

Simple But Awesome Lemon Pepper Pork Chops

Made this tonight and it was a hit. I followed the advice of others before me: I marinated the chops in Worcestershire and EVOO for a few hours, and I added minced garlic on top of each chop. I also spread the butter (only about a total of 2 tsp per) on each side of the chops. I did not add any additional oil or Worcestershire sauce since they still had marinade on them. Then, to prevent the packs from leaking/getting holes in them (I used bone-in chops) I lined each piece of foil with a piece of parchment paper. The last change I made was to cook them on the grill. I used a med heat and put the chops on the top shelf. Delicious!
