About this Cook
I'm a newlywed who is trying to wean my husband from Hamburger Helper. I started tinkering with the stove when I was in 7th grade; Mom and Grandma thought it was best to learn at an early age. Unfortunately, I didn't pay too much attention to the cooking lessons, but adored baking. Hence, I was always the "baker" in the family. I grew up in a big hispanic family and when one cooks, its for everyone! I'm a proud military wife who has a wonderful/picky taste tester (my husband).

Absolute Mexican Cornbread
Enjoyed the recipe! I've made it twice already and each time it was fabulous. For me, I didn't have a problem with the amount of butter so I'll stick to what the recipe states. Second time, I forgot to restock my pantry with cream of corn, so had to improvise with: one can of sweet corn, 1/4 cup milk and a 1/8 sugar. If I do run into that problem again, I'll just omit the extra sugar as it was too sweet that time.

Raspberry and Almond Shortbread Thumbprints
Words cannot describe how easy and delish these were. I made these at the last minute for SuperBowl Sunday and they were a hit!! Now, I didn't plan out to make this, (it was decided on a whim) so I didn't have almond flavoring. I substituted with Amaretto liqueur in the shortbread and the glaze. I'm glad I did it, too. Also, I forgot about the raspberry jelly (again, I was very unprepared) but I did have strawberry jam. I'm not too fond of strawberry jam, but the hubby is and it was great enough for me to overcome my dislike. I did triple the batch (don't know why I did that, either) so I had plenty of left overs. I got lazy about over half way through and just squashed the dough w/o putting jam on. Again, still good that way, too. Next time, I plan to be prepared and buy the raspberry jam, but I'm keeping the Amaretto liqueur ;-)

Easy Chocolate Bundt Cake Glaze
Nice glaze. What it really reminded me of was the chocolate frosting of a donut at a bakery. Even the hubby said it. What I really enjoy best was it is a very versatile glaze and I can put almost any flavor in it. I thought I had vanilla, but didn't. I put in a little Amaretto Liqueur. It was still yummy.
