Crispy Pork Carnitas

I don't know if it was the cinnamon or the Chinese 5 spice, but it tasted funny..The texture was perfect though, and I'll make this again but leave those two ingredients out.

Popovers

The key to successful popovers is several things as others have noted. Preheat oven and pan, use cooking spray such as PAM on hot pan, use room temperature ingredients, and most importantly, don't over mix the batter!!! Perfect every time.

Chef John's Blueberry Muffins

Not that Chef John's recipes are not stand alone awesome, but I had to make a few changes because of what I had on hand. I substituted Yoplait peach yogurt for sour cream, Meyer lemon zest for lemon zest, frozen blueberries for fresh and coconut oil for vegetable oil. They came out really, really delicious!

Beef Enchiladas II

Great recipe. Use the McCormick dry enchilada mix and pick up an 8 oz. can of tomato sauce while you are at the store... You will need it to make the sauce. Instead of putting 1/4 cup sauce in bottom of dish, add it to the meat and dip each CORN tortilla in the sauce before filling. I also add cilantro, chopped olives and chopped jalapeño before rolling it up. Then top with remaining sauce, cheese and olives. Serve with diced avocado and sour cream.

Lentil Soup

Great recipe. I omitted salt and used 5 tsp. chicken bullion to give it more flavor. Also added extra pepper and used Apple cider vinegar. Instead of spinach I used "super greens" from Safeway which included baby spinach, kale, and chard. Delicious!

Chicken and Mushroom Saute

Absolutely delicious! I followed the recipe exactly but added some fresh chopped tarragon and a little cream to the sauce at the end. I served it with brown rice, green beans and butternut squash. I'll make it again.

Chef John's Swedish Meatballs

Chef John you have done it again! Best recipe for Swedish meatballs I have ever tried and I've tried many. His tip to use a combination of ground chuck and ground pork and then bake the meatballs is the trick. In the past I have always used lean beef and fried them. By baking you eliminate a lot of the fat, but keep the added flavor. I used 2 cans of Swanson beef broth since some readers complained there was not enough sauce, and served it over egg noodles with chunky cranberry sauce on the side. Other than that, I followed the recipe exactly. It was great!

Hot Tamale Pie

Outstanding! We went back for seconds and thirds. Our local store did not have Poblano peppers so I substituted a combination of green bell peppers and Jalapeno peppers. Also used Pace Picante sauce instead of Salsa, so it was pretty spicy! Other than that, I followed recipe exactly. I will definitely make this recipe again. Thank you Chef John!

Basic Spicy Tomato Sauce

Surprised to see my go to recipe here that I have been making for years. I use the highest quality crushed tomatoes with added purée that is available, and half the red pepper. A little fresh parsley, a bay leaf and Lowrey's season salt in place of regular salt added is also good. To curb the acidity, try adding 1/8 tsp. baking soda at end of cooking, or a carrot to add a little sweetness.

Fresh Southern Peach Cobbler

Best peach cobbler I have ever made. I doubled the recipe but used a little less brown sugar as other reviewers suggested. I used very ripe seasonal peaches. My guests raved about it. Bonus... Very simple to make.

Quinoa Tabbouleh

This recipe was a total winner. I used leftover quinoa that was made with vegetable broth. I also added a couple tablespoons of currents that I softened in raspberry vinegar for 10 minutes. My family loved it and I will make this again and again. Easy and delicious and healthy.
