Mushroom and Gorgonzola Soup

THIS WAS AMAZING!!!!!! I forgot the sherry and used Greek yogurt instead of half-and-half, margarine instead of butter, forgot the parsley and doubled the mushrooms. I wanted to see how it tasted with and without the cheese, but with the cheese, it was unbelievable! I did put in too much, so some lemon juice helped tone down the aftertaste. This one is going to be a staple!!

Delicious Ham and Potato Soup

AMAZING!!!!!!! I used sweet potatoes instead of regular and forgot the pepper, so this was a bit sweeter than I was expecting and it was a rather welcome surprise. I also substituted margarine for butter and it didn't ruin the quality of the recipe any. It probably would have been better had I remembered to take the lid off the pot and to put the ham in at the start, but it turned out just fine. Will make again!!

Cranberry Orange Muffins with Truvia® Baking Blend

In a rush, I made this with self-rising flour....oops. It came out fairly salty, but still edible, so if topped with cream cheese frosting, it would actually balance out really well. I didn't quite understand why baking soda, salt AND baking powder were required, but went with it anyway. I also didn't have access to fresh berries, so had to go with sweetened dried instead. I would recommend a more intense orange flavor and maybe more cranberries.

Easy Meatloaf

I used 2 pounds of ground deer meat with 2 tablespoons of garlic and it turned out great. I also didn't add the brown sugar to make it that much healthier and swapped the bread crumbs for a leftover hamburger bun and oats lying around. I had to make it fast, so spread it out in a 12x12" pan and cooked it for 45 minutes. I definitely should have browned the onions first, but it was otherwise fully-cooked and a huge hit

Slow Cooker Ham with Pineapple

Admittedly, I didn't try the recipe as written. I've had cola-flavored slow cooker meats before and it wasn't amazing, so I decided to substitute a bottle of Pinot instead. I also used a spiral-cut ham, which I think helped infuse it with deliciousness. BEST HAM I'VE EVER HAD IN MY LIFE. I marinated it in the pineapple juice and wine for 24 hours and cooked it for 9 hours while I was at work. I'm searching for a recipe that can use the leftover juices because it was that delicious. This was really simple to prepare, cook and serve that I'll make it regularly.
