Delicious, as always. I've made this several times. Usually with Yellow cake mix, but i've used White and Vanilla and it's been about the same each time--always a hit! I usually don't invert it, but it's great either way. And definitely even better with a dollop of whipping cream. Also, i mix about 3/4 cup of the cake mix into the pumpkin mixture--I think it gets rid of that mushy texture the pumpkin otherwise tends to have. I made half with pecans (was out of walnuts) and half with no nuts. Everyone agreed it was much better with the nuts. I used 4 tsp of Pumpkin Pie seasoning, and it wasn't too much...could have even used more. and i only used 6 tbsp of butter-it was plenty.

this was my first experience with Tempeh (i could only find the 5 grain kind, so that's what i used) and it was delicious! I was sure it was going to be too funky for my 2 and 3 year olds to eat, but i added it to our "tuna" melts and they ate it up! I'm not a vegan, so i just used real mayo, which was just fine. And i didn't have celery, so i added cucumber--great texture! I'm a big believer in eating fermented foods, and now this is a fun addition to my recipe box! thanks for this recipe!!

I love lentils. I love tacos. I was STILL skeptical making this recipe--but it was AWESOME! the guacamole, cheese, tomatoes and cilantro all helped :) I made my own taco shells with the corn tortillas i had in my fridge--just sprayed some olive oil on them, and put them under the broiler for a couple minutes on each side. I would gladly serve this to all my meat-eating friends!!
