Chocolate Brittle Surprise
Surprisingly super easy and fast to make with very little mess. I accidentally left out the foil, but this worked well anyway - just twisted the cookie pan to loosen and dumped it out as a solid sheet onto foil after cooled. Ddin't have soda crackers and thought salt would compliment the brittle nicely, so I used salted oyster crackers and they turned out very pleasing to the eye. Mine were a deep caramel color and looked to be on the verge of burning after only 10 min. In the end they are too buttery for my liking, which is why I gave them only 3 stars, but my boyfriend loves them and I like the texture quite a bit - might manipulate my old brittle recipe (which is unfortunately twice as complicated and 4x as messy) to inlucde oyster crackers next time and see how they turn out! Piadina Romagnola (Italian Flat Bread)
Great quick and easy recipe. Great with Humas or white bean humas. Or just olive oil and some good sea salt and herbs

Apple Crumb Pie
I cut this recipe in half and then split it between four mini cocottes lined with homemade pie crust, add lg chopped walnuts and dried cherries to the apple mixture and fine chopped walnuts to the topping and then cook them in the toaster oven. They're delicious, but be careful not to burn them as they cook way faster!
