My Best Clam Chowder

I've had a lot of clam chowder in my life, and I have to say that this recipe is one of the best! It's fairly easy to make and the results are great. It doesn't have an overwhelming clam taste, so it's good for people who think most clam chowder is a little too clammy.

Red-Skinned Garlic Mashed Potatoes

Yum yum yum! These are some GREAT mashed potatoes. I highly recommend that you press the garlic after you roast it (since the mixer didn't QUITE get it into little chunks), but still a wonderful recipe for mashed potatoes.

Chicken Enchiladas I

These are some DARN good enchiladas! I especially liked it when I topped it with the green taco sauce instead of the red. And this recipe can be made with beef as well, and it still makes a great meal.

White Cheese Chicken Lasagna

Made this for a family gathering, when my sister-in-law and I were trying to outdo the men with a better meal. This was a GREAT choice! Everyone loved it, and there was still enough for leftovers (only for a day, though; they went really quickly). I will have to make this one again over and over, since it was great! I accidentally used whole spinach instead of chopped, but that didn't affect it at all.

Red, White and Blue Slaw Salad

I would have to agree; this is some of the best cole slaw I've ever eaten. I have made this several times now, and it is always a hit. I will often cut back on the bacon and add more tomatoes (which makes it a little healthier, plus I love tomatoes). Yum!

Beer Butt Chicken

Very moist and yummy indeed! I was worried at first that we had to lay the chicken on its side (it wouldn't stand upright), but it still turnout out moist and delicious. I will definitely make this again.

Bodacious Broccoli Salad

Made this for a family occasion, and I had so many compliments about it. The only thing I did was use low fat mayo instead of regular, and added 1/4 cup of sunflower seeds. It was a little sweeter than I usually like, but still very tasty and had good results. I will definitely make this again.

Carrot Cake III

I was worried at first that this would be a little dry (I have no idea why!). However, it turned out moist and delicious; it was the best carrot cake I've ever eaten. I made it for my boyfriend for his birthday, and everyone loved it so much! Even my sister-in-law, who says she doesn't like carrot cake, ate a piece and loved it. This one is a real keeper.

Awesome and Easy Creamy Corn Casserole

Yum! I've made this a few times now, and it is just so delicious. The first time I used sour cream, but I found I like using cream cheese a little better. Just make sure you get it soft first, or you'll have a really hard time mixing it in.

Crispy Rice Candy

We didn't use the marshmallows, but these were still very tasty without them. Matter of fact, I think they might have been better this way. I will definitely make these again. They are very easily to make with children or teenagers. Yum!

Ranch Dressing II

Well, I added a little more dill to this, since I love dill. I did see that it was more like a dip than a dressing with the sour cream, but it was perfect for vegetables and hot wings! It had a nice flavor, different from the bottled ranch. I think I'm going to start making it from scratch every time.

Mini Upside Down Pineapple Cakes

These were a big hit at my family dinner! It was nice to have such a good recipe for the occasion. I took the advice of others and use crushed pineapple instead, and I'm glad I did. I've been specially requested to make these again sometime.

Caramel Peanut Fudge

Oh my!! This fudge is TO DIE for!! It may seem like a lot of steps, but they go quickly. Believe me, it's worth it! And you will want to cut them into very small pieces, because it is very rich fudge. Yum yum yum!

Gooey Butter Cake II

Just be warned, these are not like cake; rather more like a bad cookie. That being said, these are SOOO good and easy. I make them every year at Christmas time, and every year I get rants and raves. My only suggestion is to be sure to use pure almond extract, as they aren't the same with the imitation stuff. I've also seen this recipe tailored to regular cookies and I've been itching to try them as well.

Bolognese Stuffed Bell Peppers

Wow! My partner and I thought these were the best stuffed peppers we'd ever eaten. I didn't have any pancetta, so I used bacon instead. Also, I substituted onions for the carrots and celery. As others reported, it was only enough to fill four green peppers, but that was fine with us! This one is DEFINITELY a keeper!!

West African Peanut Soup

I have made this many times, and while it is wonderful as is, I have tweaked it to make it a little healthier. First, I add some carrots and celery to increase the veggie content, and only use about 3/4 - 1 cup peanut butter, which is plenty. If you find this is not thick enough, I sometimes make a cornstarch slurry to give it the same consistency as the original. I also use fire-roasted tomatoes in this, as it adds a particular rustic flavor to it. Either way, this soup is requested all the time at my work parties!

Beer Margaritas

These are SO awesome! I've made these for several parties now, and I worried that they would be too strong. If you use a light enough beer, you really don't taste the beer at all. Just beware - these really pack a punch. I sometimes sub out some of the tequila with triple sec to keep the potency down a little bit.
