My Best Clam Chowder

I've had a lot of clam chowder in my life, and I have to say that this recipe is one of the best! It's fairly easy to make and the results are great. It doesn't have an overwhelming clam taste, so it's good for people who think most clam chowder is a little too clammy.

Kraft's Broccoli Rice Casserole

This is very simple to make and VERY delicious. I highly recommend it as a nice side dish. To turn it into a casserole as a main course, just add some chicken and Viola! A perfect dinner casserole!

Red-Skinned Garlic Mashed Potatoes

Yum yum yum! These are some GREAT mashed potatoes. I highly recommend that you press the garlic after you roast it (since the mixer didn't QUITE get it into little chunks), but still a wonderful recipe for mashed potatoes.

Pretty tasty and low fat to boot! I found this recipe works well in a crock pot too, so you can fix it before work and have dinner ready when you get back.

A great and simple recipe to make chicken. Not very garlic-y, but I'd imagine you could find a better way to get the garlic on the chicken to make it that way.

Chicken Enchiladas I

These are some DARN good enchiladas! I especially liked it when I topped it with the green taco sauce instead of the red. And this recipe can be made with beef as well, and it still makes a great meal.

Cha Cha's White Chicken Chili

I think this recipe is the best one I've ever had for white chili. I've made this several times now, and I think each time I like it better than the time before. Definitely a keeper! However, it IS spicy, so I don't use the jalps.

West African Peanut Soup

I have made this many times, and while it is wonderful as is, I have tweaked it to make it a little healthier. First, I add some carrots and celery to increase the veggie content, and only use about 3/4 - 1 cup peanut butter, which is plenty. If you find this is not thick enough, I sometimes make a cornstarch slurry to give it the same consistency as the original. I also use fire-roasted tomatoes in this, as it adds a particular rustic flavor to it. Either way, this soup is requested all the time at my work parties!

Gooey Butter Cake II

Just be warned, these are not like cake; rather more like a bad cookie. That being said, these are SOOO good and easy. I make them every year at Christmas time, and every year I get rants and raves. My only suggestion is to be sure to use pure almond extract, as they aren't the same with the imitation stuff. I've also seen this recipe tailored to regular cookies and I've been itching to try them as well.

Vegan Black Bean Soup

I read some reviews and cut out the celery and added more carrots and some rice. It needed more garlic in my opinion (though I like my food with a heavy garlic taste), but ended up very tasty anyway.

Highly flavorful and tasty. I couldn't find the lemon and herb soup, so I took the suggestion to use the herb and garlic. I turned out SO well I don't think I will change that.

Red, White and Blue Slaw Salad

I would have to agree; this is some of the best cole slaw I've ever eaten. I have made this several times now, and it is always a hit. I will often cut back on the bacon and add more tomatoes (which makes it a little healthier, plus I love tomatoes). Yum!

Beer Butt Chicken

Very moist and yummy indeed! I was worried at first that we had to lay the chicken on its side (it wouldn't stand upright), but it still turnout out moist and delicious. I will definitely make this again.

Bodacious Broccoli Salad

Made this for a family occasion, and I had so many compliments about it. The only thing I did was use low fat mayo instead of regular, and added 1/4 cup of sunflower seeds. It was a little sweeter than I usually like, but still very tasty and had good results. I will definitely make this again.

Carrot Cake III

I was worried at first that this would be a little dry (I have no idea why!). However, it turned out moist and delicious; it was the best carrot cake I've ever eaten. I made it for my boyfriend for his birthday, and everyone loved it so much! Even my sister-in-law, who says she doesn't like carrot cake, ate a piece and loved it. This one is a real keeper.
