Sausage Pasta

This recipe was pretty darn close to what I was looking for to make a quick and easy dinner. I used fresh spinach instead of frozen, skipped the chicken broth, added a little wine and a tablespoon of onion and chive cream cheese for a little creaminess. Yum!

Liege Belgian Waffles with Pearl Sugar

This recipe was surprisingly less difficult than I thought it would be. The waffles turned out with a great level of crispiness, sweetness, and that delicious yeasty flavor. However, my waffles leaked butter everywhere, so I think next time I will cut the butter down to one and a half or maybe even just one stick of butter. Otherwise, everything was delicious. I may try the turbinado sugar or the sugar cubes next time to see how close to this it turns out, as the pearl sugar is a little on the pricey side.

Hot Water Pie Crust II

I was very surprised how great this turned out. This is my new go-to recipe for pie crust. I used butter instead of shortening, since that's what I had on hand. It tasted like a buttery shortbread. I rolled it out between pieces of wax paper and did not refrigerate, and it was fine. When I got it on the pie pan, it tore just a little as I was adjusting it, but that was easily rectified. I plan to use this recipe for pecan pie next!

Creamy Hot Cocoa

This makes some really tasty hot cocoa. I really love sweet stuff, but even I agree that 3/4 cup of sugar is a little too much. The second time, I cut the sugar down to a heaping 1/2 cup and it was perfect. It really makes the chocolate taste richer. I think this is delicious both with and without the extra half and half added at the end.

Strawberries 'n' Cream Trifle

This was a great hit at my family potlock. Very easy and delicious, not to mention the diabetics in my family could eat a small portion without feeling too guilty. My biggest complaint is that the pudding really does set quickly, and it makes it difficult to fold in the whipped topping if you don't act quickly enough. However, even that doesn't really affect the taste so much as create some minor texture and appearance issues. I would definitely make this again.

Beer Margaritas

These are SO awesome! I've made these for several parties now, and I worried that they would be too strong. If you use a light enough beer, you really don't taste the beer at all. Just beware - these really pack a punch. I sometimes sub out some of the tequila with triple sec to keep the potency down a little bit.

Morning Glory Muffins I

One of my favorite muffins! Of course, I had to tweak it just a little bit. I used half AP and half whole wheat flour, 2 whole eggs instead of the the egg whites, applesauce instead of the apple butter, and 1/2 the raisins to substitute the rest with coconut. I didn't have any wheat germ, but I mixed 3 T flax seed and mixed in 1/4 chopped walnuts into the mix. Yum!

Lola's Horchata

I followed other reviews and added a cinnamon stick to the rice water. I then doubled the milk, combined it with 1/2 t. cinnamon and sugar, and boiled it into a thin syrup before mixing. It is good, but I think it might need just a little further tweaking.

French Onion Dip From Scratch

Very easy and delicious! It did take a little longer than 20 minutes to caramelize the onions, but it was still TOTALLY worth it. I'm not sure if I can eat store bought again.

German Apple Cake II

The day I made this, it was very good. The next day, it was OUTSTANDING! The only change I made was substituting cake flour for all-purpose. I followed another suggestion about pulsing the apples into smaller pieces - great idea! My boyfriend loved it so much it's his new favorite cake.

Blue Ribbon Overnight Rolls

These rolls are SO easy and delicious! I've made them a few times now, and here's the key to making them perfect: let them rise overnight, roll them out and into their individual rolls (I prefer to make them round), and let them rise again for at least a couple of hours. The dense roll is still tasty, but after it's risen the 2nd time, it creates a fluffier texture. This one is DEFINITELY a keeper!

Peanut Butter Cupcakes

Just pulled these out of the oven and let them cool a bit. I haven't added the frosting yet. The texture is a little thick and dry, but the flavor is good. I think it needs some tweaking.

Aunt Teen's Creamy Chocolate Fudge

This makes surprisingly wonderful fudge. I use the store grand generic chocolate chips, but you can't tell. Just make sure that you bring the liquid to a FULL BOIL before you start the five minutes. Otherwise, the fudge won't set correctly.

World's Best Lasagna

Yum! I don't know if it's the world's BEST, but it was pretty darn tasty. However, I think it needs some vegetables in it too. When I made it, I didn't add any because my guests were picky eaters. And I used fire-roasted tomatoes in the sauce, and left them diced for some good texture. I will be making this again.
