Red Velvet Cake

I made this cake Sunday. I have to say it is very good, the whole cake is gone. I did just a few changes. I used 1 cup of oil instead of the shortening and I did a cream cheese frosting with pecans on top. Next time instead of baking for the full 30 minutes i will take it out 3 to 5 minutes before time to see if it will be a little more moist.This cake for some reason a day or two after making it, it tasted even better. I will be making this one again for sure.

Sweet Potato Pie I

After losing my own pie recipe I came across this one. I must say this gives the meaning to less is more. I Changed just a few things. Instead of regular milk I used evaporated milk and I beat my eggs before adding to mixture. I also doubled the recipe to make 2 pies but I only add 1 1/2 cups of sugar. It was perfect and my husband loved it. Also be sure to beat potato mixture well to remove the strings and it makes for a smoother, creamier pie.
