Soft Oatmeal Cookies

These were great. I got 4 doz from this recipe. Next time I will cut sugar back to 3/4c. Ran out of oatmeal, so I used 1 pkg of instant brown sugar oatmeal to equal 3 cups.

Raspberry and Almond Shortbread Thumbprints

Great cookie. I substituted raspberry cake & pastry filling for raspberry jam. I put in refrig for 15 min before rolling into balls. I used my tip of my little finger to press into the cookie. I did not have any problems with the filling running.

Chocolate Mint Cookies I

This is the best! I followed the recipe and then added 1/4 tsp of crime de menth. Baked for 6 min and topped with a Hershey kiss mint truffle. Baked for 2 min. Took out of oven & spread out kiss. Sprinkled with powdered sugar.

Light Lemon Poppy Seed Bread

This is the best! I made this healthier by substituting sugar free pudding for pudding, decreasing oil to 1/4 c. and adding 1/4 c. light vanilla yogurt. I added 1 can (11oz) of mandarin oranges with light juice. I drained the juice & added lemon juice to make 1 cup & substituted it for the 1 c. of water. I baked it in 4 mini loaves for 35 min. This is so tasty & moist.

Low Fat Chocolate Chocolate Chip Zucchini Bread

Great bread! I substituted 6 tblsp cocoa for the unsweetend chocolate. To make this lower in fat I substituted 2/3 c applesauce & 1/3 c oil for the 1 c.oil. I changed the 2 c. sugar to 1 1/2 c. sugar & 1/2 c.splenda. I baked it for 45 min.

Cream Cheese Frosting I

This frosting is really runny. I think it was because I used light cream cheese. I had to add 2 more c. Of powdered sugar & it still was runny. Next time I make it I will put it in the refrigerator for a few min before I use it. Once I refrigerated it, it stayed firm.

Broiled Sweet and Tangy Tilapia

Excellent! We are not big fish eaters, but this is healthy and good. I did not coat foil with butter, just sprayed it with olive oil. Used dill instead of tarragon.
