Easy Garlic Broiled Chicken
AWESOME! I made some changes b/c I didn't have enough butter (used Olive Oil), no parsley (used dried Rosemary, Taragon, & Celery Salt), and added honey to the mix. My family was RAVING about it! The kids- the picky kids- were moaning saying, "Oh! Ooohhh! This is SOOOO GOOD!" My husband told me, 'WOW, you have outdone yourself! This is one of the best meals you've ever cooked!" I was requested to make this dish again...and OFTEN.

Asian Coconut Rice
Since I ran out of coconut milk, I happened to have a concentrated paste for coconut horchata. I used mostly water and in place of the 14 oz of coconut milk I used whole milk and added the concentrate. I then took a spoonful of coconut oil with natural curry flavor (while it was hardened) and threw it in the liquids. I took a handful of dried coconut and threw it in there with the rice. Unfortunately, I was the only one who liked it. My husband doesn't like anything with coconut and the kids thought the rice was too "perfumey."

Bananas Foster II
DELICIOUS!!!! I made some changes: 1. Added a tablespoon of nutmeg 2. Of course I put much more cinnamon than the recipe called for b/c I love cinnammon 3. Instead of using dark brown sugar I used Panela (which is unrefined sugar that you can buy at Latin grocery stores usually in the shape of a cone or brick) 4. I used Malibu Rum b/c I felt a tropical rum would compliment the bananas. Not sure if I would use walnuts again- b/c they kind of get in the way. Meaning, you want to taste the rum, the ingredients, the sweetness of the banana but when walnuts get stuck around your teeth as you chew with their strong flavor, it takes the wonderful experience away. The banana was SO sweet and the rum was not offensive at all (didn't taste like alcohol whatsoever). I will definitely be making this again. I was excited that I didn't have to flambe in this recipe b/c I've never flambeed anything
