Fresh Grapefruit Juice Smoothie

This was good. I did change it a tad. I used an actual grapefruit with the flesh, instead of just the juice. I was trying to avoid a runny smoothie. I also skipped the ice because I feel like that waters it down, so I used frozen strawberries to take place of the ice. I tasted it before and after adding the yogurt, and I actually liked it better before the yogurt! Maybe it's just because I like the tartness of the grapefruit and the yogurt takes that away.

Caramelized Brussels Sprouts with Pistachios

Fantastic! I messed up a few things but it was really good. Like other reviewers said, don't add the vinegar right away, it will mess up the onions and they won't caramelize. Anyway, I had 1 lb of brussels sprouts, I only have earth balance spread because I don't buy dairy butter, and I only had apple cider vinegar. I didn't use much vinegar, as I was unsure about the substitution. I also maybe steamed the sprouts longer than I was supposed to. They were very tender. That's fine, I like them that way anyway. They were sweet and flavorful. What a win!

Avocado Mango Salsa

Awesome recipe. Many of the other salsa recipes call for oil or other unnecessary ingredients. I used only half of the lime juice because the salsa seemed really moist already (possibly because the mango was pretty ripe) but that turned out great, the lime is very potent so it doesn't even need the whole lime. I also used a jalapeno pepper instead of the habanero because I've never used habanero and wasn't sure if they were too hot or not hot enough for me. Didn't want to chance it. Next time I'll try them.

Coconut Milk Rice Pudding

This was a good idea, I enjoy risotto and rice pudding and this is like a cross between the two. I had the coconut milk but no regular milk, I only had vanilla soy milk but that worked. Didn't need to add much additional sugar because the vanilla soy is sweetened already. Next time I'll use real milk.
