Whitney's Peanut Butter Cookie Balls

I loved the addition of 1 c. rice krispies. I used natural peanut butter which I would not recommend since it is more oily and separates. I am bad at waiting for things to set up so I popped mine in the freezer and was able to eat them within 15 minutes! I also think next time I will only use 1 c. of butter.

Chicken Casserole Mississippi

The most delicious topping ever. I use it on other dishes too. I thought the rest of the recipe was pretty standard though we used less noodles than called for. We like our casseroles creamy.

Easy Salmon Cakes

I agree that the basic recipe is dry, but if you don't drain the can of salmon it holds together really nicely and the measurements don't have to be altered. I added sharp cheddar cheese to my mix for some additional flavor and the cheese browns really nicely in the pan.

Blue Cheese, Bacon and Chive Stuffed Pork Chops

Also good with chicken. I breaded my pork with breadcrumbs/egg (and chicken when I tried it) because I found baking it with just the garlic salt and pepper made the outside a little rubbery. If you try the breadcrumbs you do not need to season the meat at all with garlic salt or pepper.

Beef Wellingtons

I didn't like the cream sauce and the puff pastry got soggy. So to remedy it, I cooked the pastry shells and meat separately. I put the cooked meat into the cooked shell and layered it with goat cheese (boursin works well too) and popped it back in the oven for 5 minutes so the cheese would warm up. My husband and I like it this way.

Excellent tangy dressing for all salads! My mom and I loved it so much we ate what was left with bread. If you add sugar it makes a good coleslaw dressing too!
