Cherry-Berry Pie

Wow, this was great pie!! I used fresh strawberries and cherries (not sour cherries) - I sliced the berries and cherries and sprinkled them with sugar/lemon juice, stirred and let them sit for about 5 minutes. I mixed the dry ingredients (tapioca, sugar, cornstarch & salt) with 3/4 cup of water and the juice from the berries, let it boil for 5 minutes, added the sliced fruit and boiled for another 2 mintues. I used a "shortbread cookie" crust (like a graham cracker crust), no top crust and baked it at 350 F for 20 minutes. My husband and kids were disappointed that there was only 1 pie and not 1 EACH!!!!

Dijon-Dill Brussels Sprouts

Our whole family loved this!! I left off the water chestnuts (didn't have any) and increased the black pepper, but otherwise made it as directed. I didn't find the mustard or any of the other flavours to be overpowering at all of the flavour of the brussels sprouts. This would be wonderful made with fresh dill and with a lemon slice & a sprig of dill as decoration.

Spicy Rapid Roast Chicken

Juicy, flavourful ... wonderful!! After washing & drying the chicken, I sprinkled a little salt & pepper into the cavity and then stuffed the chicken with a quartered orange to add moisture & flavour (and to absorb fat). I added powdered garlic to the spice mix as well as a little thyme. I poured some white wine and lemon juice into the bottom of the pan and put the chicken in breast side down to ensure it was as moist as possible. I cooked it as suggested by another reviewer .. 20 mins at 500, 20 mins at 450, 20 mins at 425. I basted it several times during cooking and added water/chicken broth as needed, then turned it breast side up and removed the roasting pan lid for the last 10 minutes, then let it rest for 15 minutes while I made gravy. It was perfectly cooked (I had a 3 3/4 lb bird), moist, flavourful and the boys LOVED the gravy over the chicken as well as on their baked potatoes. Great recipe - thank you!!!

Easy Garlic Broiled Chicken

This was great (or as my 8 year old said "WICKED AWESOME!!!") I made the recipe as written, then added about 1 1/2 tbsp worcestershire sauce, as well as oregano & thyme. I made 2 batches of the sauce - 1 to marinate the chicken (about 1/2 hour) and 1 to baste over the chicken during cooking on the BBQ. Using it for basting made an extremely flavourful crust from the BBQ (be careful to keep the flare-ups under control or it will char completely) and the chicken was great. This will definitely be a favourite at our house from now on!!!

Peppered Beef Tenderloin

I used fresh lemon zest and used more garlic than called for. My husband looked at it and mumbled something about lemon and roast beef being gross together. Boy was he eating his words 45 minutes later!! The roast came out PERFECT - very rare (just how we like it), peppery, and the lemon added just a lovely hint of zesty taste.

Baby Carrots And Brussels Sprouts Glazed With Brown Sugar and Pepper

I made this for Thanksgiving dinner because I love Burssels Sprouts and because I wanted a colourful dish to make the dinner look nice. I took the advise of several others and cooked the veggies a bit more than recommended. I also added some cornstarch (mixed with a little water) to the sauce to thicken it a bit. I would add more next time, as the sauce is still fairly "watery". Overall it was very colourful, extremely tasty and even the kids came back for seconds. It was even better as leftovers - I froze the leftovers and then we ate them a couple of weeks later after we were done being tired of turkey leftovers :) Overall a terrific recipe that I will make again and again.

Bakery Shop Icing

This was superbly creamy -- sweet without being sickening, and very easy to make. I took others' advise and used the full amount of butter called for, and then rather than 6 tbsp of shortening, I sed 3 tbsp shortening and 3 tbsp more butter. I used peppermint extract rather than vanilla to preserve the white and beat it longer than called for as recommended by others. It was easy to work with and I though it tasted great!!

Spaghetti Carbonara II

We really liked this -- my 5 year old actually asked for THIRDS!!! My "I hate all carbs" husbande liked it, but he said it "had no zing" (of course, he also thinks that suicide wings don't have enough zing, so take it as you will...) It was actually a little plain, but it I didn't put any salt or pepper on it at the end, and I made the recipe mostly exactly (I left out the onions, and I used a "white" zinfandel as I didn't have any actual white wine). All in all, this will become a regular meal in our house (and I'll just give my husband a bottle of hot chili sauce to pour onto it... ugh!)

All American Roast Beef

I was worried that there wouldn't be much flavour in this roast - added 1/2 sliced onion and a bay leaf to the pan, didn't add water as some others did - the flavour came out great, but it was a bit overdone for my taste (we like rare roast beef) - I would cut the cooking time to 12 - 15 minutes per pound, but otherwise this was very tasty & so easy!!

Cinnamon Roasted Sweet Potatoes

I also forgot the lime juice at the end, but this was an instant hit with the family!! Mine didn't come out too greasy at all and it wasn't too sweet either - just tasty!!! I used Canola oil to keep the cholesterol down, and I also tipped it into a large mixing bowl to stir it a couple of times during cooking as 3 "decent" sized yams filled my casserole dish and I just couldn't stir them in the dish. Will DEFINITELY make this one again and again and again!!!

Bread Machine Garlic Bread

Like some of the other reviewers, I used fresh garlic cloves rather than powdered garlic. The loaf does not rise much and consequently is quite dense, but the flavour is wonderful! This is one that gets made over and over at our house!

Balsamic Glazed Carrots

My family prefers their vegetables raw or plain for the most part, but they all loved this recipe and have requested it to be repeated often. The carrots came out al dente, sweet/tangy -- they were just plain YUMMY!!!!

Broccoli Bites

Pardon the pun, but I thought it sounded pretty cheezy at first, but it was easy to make and my husband and kids RAVED about them!!!!! (I HATE broccoli, and even I thought that they were really good!!!) I cook them on a griddle in a lot less oil and told the kids that they were broccoli pancakes. Guest love them too and I've been asked for the recipe over and over.
