Laura's Easy Oatmeal Squares

A little sweet for me but my boys love them in their sack lunches. Very easy to make and easy to modify based on what I have in the cupboard w/ M&Ms, chocolate chips, dried cranberries, ground up Oreos, butterscotch chips etc. I add the extras after I've mixed the melted butter sugar mixture w/ the oatmeal so that they don't melt or fall apart.

Orange Crunch Cake

This is an incredibly easy recipe that I made w/ my 8 year old and got rave reviews from everyone in the household. I used lime zest instead of lemon b/c my lemon was too old to zest and the recipe turned out stellar. Even my sister-in-law and husband who both nibble at and then refuse to eat sweets ate all of their pieces.

Five Ingredient Ice Cream

I made this recipe while camping w/ one of those new camping roller ball ice cream makers. It worked great. I used half and half instead of the milk and heavy cream. Added some cookies that had been crushed on the way to the campsite. Turned out great and was a fun treat on a very hot day on the beach.
