Strawberry Spinach Salad I

I made this recipe yesterday and it just may be one of my favorite salads/dressings of all time! I made the dressing, just shy of 1/2 cup sugar, but didn't chill it as suggested by another member. I let it sit on the counter in a mason jar until ready to serve. Quick shake up was all it needed at the table. I added blueberries and sliced honey roasted almonds to the salad and served it with the dressing on the side. I added a sprinkle of feta over mine and it was by far the tastiest salad I've had in a long time! (I'm already dreading the end of strawberry season.) Thanks for sharing!

Bodacious Broccoli Salad

I made this recipe after having it at a friend's BBQ and wound up making it for another BBQ three days later. Even non-broccoli fans were willing to give it a try thanks to the bacon and cheddar cheese. Turned out each one of them liked it and went back for another small serving. I left the recipe as is with the exception of reducing the ground black pepper to 1 1/2 teaspoons, which reduced the spiciness of dressing to better suit our taste. I recommend grating the sharp cheddar cheese yourself over using the pre-shredded kind. The flavor was more prominent and even after careful measuring, appeared to use less cheese than when measuring out the pre-shredded cheese.

Peanut Blossoms II

This recipe turns out great every time. Probably because it's a real peanut butter cookie recipe, unlike those 3 ingredient ones so there's no way you could be disappointed. My daughters also love to help roll the dough in sugar, unwrap the kisses and place them in the cookies when they come out of the oven. All of which makes baking these cookies even sweeter (not to mention easier)!

Saucy Chicken and Asparagus Bake

You MUST add water to the cream of chicken soup, mayonnaise and lemon juice mixture before poring it over the chicken and asparagus. The asparagus creates a liquid at the bottom of the baking dish during cooking so in order to make the dish edible, I had remove the chicken (scraping off most of the thick soup mixture and melted cheese) and asparagus from the baking dish before stirring in enough hot water to make a sauce.

MMMMM... Brownies

This recipe turned out great! It took no time at all to prepare and tastes so much better than the best quality brownie mix you can buy at the grocery store. I doubled the recipe and baked them at 325 for 30 in a special brownie pan that was about 9x13.

Peppermint Snowballs

I made this recipe for the first time yesterday and was very pleased with how they turned out. The cookies were soft in the middle and had the perfect amount of peppermint flavor and sweetness. I didn't wind up rolling the cookie dough in the sugar and only used 2 tablespoons of skim milk when making the glaze for a thicker consistency and added a tiny drop of peppermint extract to it. If your cookies came out too dry or crumbly, chances are are you added too much flour, probably inadvertently by scooping the flour directly into the cup. In order to prevent this I scoop flour with a spoon and dump the flour into the measuring cup and give the cup a little shake each time I add the flour. Level the measuring cup off using the straight edge of a butter knife.

Slow Cooker Beef Vegetable Soup

Perfect after a cold evening of Trick-or-Treating with the kids. My daughters, aged 8 and 2, both happily ate a warm bowl of soup before diving into the candy!

Creamy Smashed Potatoes

Antipasto Pasta Salad

I made this pasta salad for my cousin's graduation party and there wasn't a shell left by the end of it! I always follow a recipe exactly as written the first time and then will tweak it the next time if need be. This salad is perfect as is. I especially liked the dressing. I thought the dry italian salad dressing mix was a really great idea. It definitely gives the salad a fuller taste. Of course you could add different meats, cheeses, roasted peppers, artichokes, pepperoncini, red onion, etc., which would all be tastey additions as long as you make the dressing and add the dry italian salad dressing mix as the directions state.

Gypsy Chicken Stew

Could not have made a better meal while being stranded in the house all day because of a blizzard! I had to use what I had on hand so I substituted a small can of fire roasted tomoatoes for the four fresh, a tiny can of diced chilies for the four fresh green chile peppers, and mozzerella cheese instead of Monterey Jack. Still came out perfect! I made a pot of white rice and scooped some into each bowl before ladeling with stew and topping with a sprinkle of cheese. My six-year-old loved it despite being a little spicy.

Herb Roasted Pork Loin and Potatoes

This recipe turned out great! The pork was tender and flavorful and the potatoes had a bit of a crispy edge thanks to the olive oil. All you need is a steamed veggie on the side to make the perfect weekend dinner (weekday if you have 2 1/2 hours to put dinner on the table). Thanks for sharing!

Puerto Rican Breakfast Custard

My grandmother used to make this for me when I was little girl. I remember eating it on hot summer mornings in her covered portch with my father when we visited Puerto Rico. My father died when I was a teenager so I never got a chance to get his recipes. I've thought about this custard on and off for years and was delighted when I found it on allrecipes. I just made it with my 5-year-old daughter and we both loved it! I enjoy hot cereals but she turns her nose up to them so I was pleasantly surprised when she asked if we can make it tomorrow morning. Recipe is perfect! I wouldn't recommend changing a thing.

Spinach and Strawberry Salad

One of the parents always make a similar salad for Teacher Appreciation Week and this recipe is almost as tasty! I added blueberries and pecans because that is the way the parent always makes it. This recipe calls for a sweeter dressing, which I may even perfer.

New Red Potato Salad

Sunday Brunch Casserole

I served this to company and everyone enjoyed it. One of my guests has a wheat allergy so I could not use my cresent roll egg casserole recipe and didn't even miss it! I usually put the casserole in the oven with foil on top but remove it half way through the cooking. I find the eggs set faster this way and prevent the edges from browning as you wait for the center to cook through.

Slow-Cooker Chicken Tortilla Soup

I add uncooked chicken breast to the the crockpot and shred it using 2 forks when I get home from work. I also add a can of rinsed Goya black beans at the end too. Don't skip the cilantro, it makes the dish!

Chicken with Stuffing

I had all the ingredients on hand so I tried this recipe, a little hesitantly...It was delicious! I've made it at least ten times since. I always season the meat with salt, pepper and garlic powder first, and usually add 2 cans of cream of chicken soup because we love the gravy. We also perfer chicken flavored Stove Top stuffing over the cornbread stuffing.

Slow-Cooker Pepper Steak

My husband and 5-year-old request this recipe often. I like my peppers to have a little crunch so I cook this recipe on low for the suggested amount of time but don't add the peppers until 1/4-1/2 way through the cooking.
