Grandma's Lemon Meringue Pie

Hershey®'s Special Dark® Chocolate Layered Cheesecake

This cheesecake was excellent. I made for my mother's birthday party and everyone loved it. But I did make a few changes, because of my father being type 2 diabetic. I used 1/2 choc. chips and 1/2 unsweetened dark chocolate squares. I also used Oreo crumbs for the crust and low fat cream cheese (almost calorie free!)

Garlicky Baked Butternut Squash

Just made this tonite and it was fantastic! I am on a no carb diet and this was better than potatoes. I have never really had much squash before except when sweetened with brown sugar so this was a great change. Can't convince husband to like squash though but that's ok. He can have his plane old potatoes! I am going to bring this to our family Christmas gathering & hope not to many people like it - more for me!

Banana Sour Cream Bread

I halved the recipe and had enough to make 1 bread and 12 muffins. I did alter a bit in that I used half whole wheat flour and a little bran, and added chocolate chips. They all turned out great! The loaf browned lovely. Very good and easy recipe! A definite keeper.

Kay's Spaghetti and Lasagna Sauce

It's basic and delicious. The Italian recipe I got years ago had a secret ingredient in it, which, instead of sugar, called for sweet pickle relish in about the same quantity, a tablespoon or 2, depending on how a big a batch of sauce and how sweet/sour the tomatoes are. It makes the sauce!

Stuffed Zucchini

This was excellent! I didn't have sausage or bread crumbs so used ground beef and cracker crumbs, otherwise followed the recipe. I also have a husband who wrinkles his nose at zucchini but he liked it and even agreed to eat it again!

Truck-Stop Buttermilk Pancakes
