Cheesy Potato Casserole

I'm not sure if everyone noticed but this recipe is meant to be assembled ahead of time and refridgerated for 24 hours. If you are making & preparing in the same day, you probably won't need as much "soup". I found that if I cut back on the amount of sour cream a little or else add 1 can of soup, 1 pint of sour cream and 1/4 cup of half/half to prepare in the same day it works out great! Yum!

Broccoli Salad Supreme

I made this as written (except halved it) and didn't put in bacon (already putting bacon in another dish an didn't want to 'over bacon-ate' everyone :) We all loved it!!!!!!

Yum-Yum Corn

I made this recipe using 4 ears of left over fresh sweet corn. I cut the rest of the ingredients in half. I liked it alot, but I think I should have left out the salt. 1 out of 3 kids liked it, but they are pretty "basic" eaters. The butter does sort of rise to the top, but I didn't mind that. Also, I used reduced fat c-cheese and that seemed to work fine.

Frosted Banana Bars

I made these for my son's pre-school Christmas party. Everyone (kids and adults) LOVED them! I frosted them with white icing since I wasn't sure if kids would go for cream cheese. Also, I didn't wrap them real tight because they are very, very moist and I was afraid they would get soggy. This is DEF a keeper :)

Orzo and Rice

My family really enjoyed this. I used 3 bullion cubes (which admittedly that is a lot of salt) and added one sliced green onion. This will be a part of our regular rotation. It's a lot like Lipton/Knorr rice mix, only home made. You could certainly spruce this up with other veggies or chopped meat for a more filling dish.

The Best Lemon Bars

I made these in a smaller pan (11 x 7). My crust was too thick and dry. I take responsiblity due to changing the pan size, however I didn't feel that I had excess filling. The filling was as thick as the crust. The flavor of the filling was really good. If I make these again I would use the same pan, 1/2 the crust and make the filling as the recipe calls for. Then I think it would be 5 stars due to the ratio of filling & crust would be perfect!

Suzy's Mashed Red Potatoes

Made these tonight for dinner at my 7 year olds request. He had "smashed potatoes" at school. Used ranch dressing instead of sour cream (as one other reviewer did). Also added 1/4 cup more milk, we like our potatoes creamy. They were as good as schools...THATS a compliment...!
