Crustless Pumpkin Pie

Made as is with the exception of light cream in place of half & half (it's what I had on hand) and scant 1/3 cup of Truvia in lieu of 1 cup of Splenda. Set up beautifully; looks, smells, and tastes delicious. This is a great low glycemic-load recipe, definitely a keeper for us!

Make Ahead Lunch Wraps

A great way to keep healthy filling food on hand for a hungry family... this makes a terrific afternoon snack! Wouldn't mind reheating instructions though (hence the four instead of five stars) ... we haven't yet been able to defrost/reheat the filling without overcooking the tortillas.

Andrea's Pasta Fagioli

Like others, I think I will halve the pasta next time ... but otherwise, would not change a thing. My whole family devoured this and asked for more. The pasta did absorb *all* the broth overnight, so the leftovers were more of a goulash, which was also a hit with my teenager. Great recipe!

Peaches 'N Cream Banana Breakfast Smoothie

Made it as written and it gets five stars from me (and my 16 year old son ... he asks for it every morning). Have since made some changes to suit our tastes... we eliminate the sweetener and use sweetened Original Almond Breeze almond milk in lieu of the regular milk. Also we freeze the bananas, add three or four whole frozen strawberries, and skip the ice entirely. I use a half cup of yogurt (instead of 1/4) and 1 cup of milk (instead of 1 1/4) to make it a bit thicker. We buy the multi-pack of fruit 'n' cream oatmeal and use whatever flavor happens to be in the front. I grind up the oatmeal packet in a coffee grinder to make it a fine powder, so the final result is very smooth. This is an easy, healthy, and tasty recipe. Kudos to Susanb36 for posting this one, we love it!!!

V-Eight Vegetable Beef Soup

One of the easiest and tastiest recipes ever. The first time I made it exactly as written and it was excellent. I have made it with several alterations/additions since, and the best we've had yet is to keep the original recipe but use 1 1/2 pounds stew beef in lieu of the hamburg. It makes the recipe even simpler; no need to cook the beef first, just toss everything in the slow cooker, leave it on low for eight hours and it's perfect. Great reheated the next day too.

BUSH'S® Red Hot Buffalo Wing Beans

Made this exactly as listed and it was a huge hit with both husband and teenage son. I was pleasantly surprised ... love the texture of the celery and the creaminess of the buffalo/ranch combination. I served it over Tyson frozen grilled chicken filets (I added buffalo wing sauce to the chicken before baking as well) with homemade crusty bread for a quick and easy meal. Will definitely be making this one again.
