Slow Cooker Carnitas

First time I made this, I followed it to a T and it was too salty. Maybe my chicken cubes has too much salt. So the second time I only used salt to taste in the end and it was amazing! I followed someone's tip to broil it for a few minutes to crisp. One of the best tacos I've had!! Used soft taco shells with fresh avocado, diced tomatoes, sour cream and fresh cilantro. SOO GOOD. Tonight I felt like chili and couldn't find a recipe I liked. So I whipped this carnitas recipe up in the pressure cooker. Using the same pot I sauteed onions, garlic, red bell pepper, hungarian pepper and added more of the spice mix + cayenne, paprika, a little sugar and black pepper. Once softened, I added a can of mixed beans, a few more cups of chicken stock and crushed tomatoes. BAM. This recipe is so amazing and surprisingly versatile. I want to try making pulled pork with it next time.
