Jambalaya

Excellent!! Just used olive oil, kielbasa, no file powder, and added some shrimp during the last 7 minutes. Since I added the shrimp, I used a full 28 oz can of crushed tomatoes. Also seasoned with some thyme and fresh basil. Cooked rice separately, so skipped on the broth.

Easy Pizza Sauce III

With modifications, very good! Based on reviews I decided to use fresh garlic (2 cloves), 2 tsp of basil, 1/2 tsp of sugar, 1/2 a tsp of onion powder, and only 2t dried oregano. Still very easy! Used with 'Grilled Pizza Wraps' recipe on this site. Delish!

Fresh Cherry Cobbler

I used sweet cherries and also halved both sugar amounts. Very tasty. I used 2% milk which worked great. I also added 1 t. vanilla in with the milk, and sprinkled cherries with cinnamon, brown sugar, and cocoa powder. Thanks a lot!

Flavorful Mexican Mole

This wasn't like the dark mole i'm used to, but i should've guessed that from the amount of tomatoes. I made a half recipe, but used 3 jalapenos, and it was just way too spicy for me. After tasting the sauce before heating it, I ended up throwing half of it away in order to fix it up and allow it to fit into my food processor. After making some changes, it was awesome! I calculated what the changes would be to keep the original serving size and they would be to use half the amount of tomatoes, use only 2 jalapenos, double the amounts of walnuts, sesame seeds, raisins, and chocolate, use 3 T garlic, and add in the veg. stock to desired consistency (i probably used 1/2 of suggested amount; it will thicken a little when cooking with main entree). I also made it with chicken legs and thighs.

Peach Cobbler V

I loved how easy this was. Based on some reviews, I did make some changes. I used 1 1/2 cups flour, 2 teaspoons baking powder, 2 teaspoons cinnamon, 1/2 teaspoon each of salt and nutmeg, and I used half white sugar and half brown sugar (for a total of 1 c. sugar, which was plenty sweet for us). I also used 30 oz. canned peaches, and felt like it still needed more, maybe another 15 oz. can, as there was more "cake" than peaches.

Five-Minute Blueberry Pie

Tater Tot Casserole III

Didn't have much milk so I went through the reviews and improvised: I seasoned 1 lb. meat with salt, pepper, onion and garlic powder, and worcesteshire, and sauteed some diced poblano pepper with meat. I put the meat and peppers on the bottom of 9x13. I added a layer of French fried onions on top. Then, in the same skillet I cooked the meat in, I heated the cream of mushroom, 2 cans drained green beans, and 1 small can tomato sauce. I added this on top, then the tots, then some shredded cheese. Very homey and yummy!

Shrimp Burritos

My husband and I really enjoyed these! Nice spicy kick. I used whole black beans instead of refried, and sour cream instead of yogurt, which I didn't have on hand. Will def. make again.

Oatmeal Pancakes II

Very yummy and simple. Has a nice different taste. Added some pecans for a nutty flavor. Didn't have buttermilk, so used 3 teaspoons of vinegar and the rest 2% milk to make total of 3/4 c. Still very good!

Cola Pot Roast I

This was great! I didnt have the spaghetti mix, so took someones advice on using tomato paste + italian dressing, and it worked out fine! I also used carrots instead of celery (didnt have any)Pretty easy, too.

Pepperoni Burgers

Mmmmm....yummy! Nice and juicy. The pieces of pepperoni came out perfectly crispy. I just used 4 oz. of the pre-sliced pepperoni. Added an extra clove of garlic, and 2 T water as someone suggested, and perfect!

Grilled Sausages with Caramelized Onions and Apples

Hubbie and I thought this was yummy. I used pre-cooked kielbasa, so skipped the boiling, and just added it sliced up into the apple/onion mixture after it caramalized.

Slow-Cooker Pepper Steak

Great taste! After 6 hrs, the meat was so tender it was almost melting (not so great on presentation, though). Maybe I sliced my sirloin way too thin...Other than that, I used worcesteshire sauce instead of soy, and browned my meat with some fresh garlic. Instead of boullion & water, I used 1.5 cans of beef broth. I added my peppers & onions for the last 2 hrs. and they were still too tender for my taste. Next time I'll add them for the last hr.

Ham N Asparagus Roll-Ups

Cranberry Meatballs

These were just good for me, not outstanding. Maybe I'm just not accustomed to the texture of whatever the veggie patties are made of. I agree that the balls should be drizzled, as I found the color of the cranberry sauce not-so attractive, and with the balls all mixed in there, it was blah looking (to me). I'm going to try them for a shower, and see how they go over. The flavor WAS really good.

Steak Hash

Great way to use up the leftover ribeyes! I didn't already have cooked potatoes, so I just diced some up, and cooked them with salt and pepper in a large skillet, then added the peppers and onions, one garlic clove, then the steak pieces. Used colby jack cheese and was yummy!

Sweet and Mild Cooked Tomato Salsa

I think the outcome of this salsa can depend a lot on the type and size of the tomatoes used. Roma are the best for salsas, IMO. Mine were a tad on the small side, so I had to use about 10 of them to keep the salsa from tasting too vinegary. I only simmered mine for 2 hrs. and yummy!! I do puree the final product to hide the chopped onions from my kids, and only use 2 oz. of the diced chiles. Is good!

30-Minute Minestrone

Super easy, quick and tasty! I used 2 medium fresh tomatoes and some tomato sauce in lieu of canned. Daughters and dh loved it. Does need some seasoning, basil, parsley...

So very easy and tasty. I ended up adding more of all of the spices. It was a *tad* bit on the tomato side, even with 1.4 lbs. of meat. Topped with green onions and shredded cheese. Oh, and I threw in half a can of diced green chiles that I needed to use.
