BBQ Chicken Pizza

Great recipe! I sauteed some diced chicken with s&p, chili powder, and basil. I also sauteed my onions a little with garlic and bell pepper, just until a little tender. I used Sweet Baby Ray's Honey BBQ sauce, and threw some green onions on top to use them up. Husband loved it!

Absolutely the Best Chocolate Chip Cookies

These were good. My husband really liked them, I think b/c I used half milk and half white chocolate chips. I think I prefer cookies made from butter, though.

Mom's Fried Fish

Mine came out great!! Make sure to use relatively fresh crakers, though, I think stale ones would ruin the recipe. The 'crust' was perfect and tasty. And the tarter sauce was good for me and my husband. Thank you!

Clone of a Cinnabon

These were really good, but I expected them to be A LOT better per reviews. They are best when very warm. A few steps up from the pre-made, but not quite as yummy as the ones from the mall, IMO. That said, I did slice the rolls to make 24, not 12, so, maybe that made a difference?

Jet Swirl Pizza Appetizers

These were great! My husband made these. He, too, put a thin layer of pizza sauce before the meat, and brushed some EVOO on top of the dough before baking. Suprising flavor for such a simple recipe.

Cumin Chicken With Apples

Tasty! Will make again. I used fresh mushrooms and sauteed them until they "sweated" most of their water out before adding the apples and onions (and 2 garlic cloves). I also used 1 T butter and 1 T EVOO, instead of 2 T butter. I sprinkled the chicken with paprika after browning and omitted the chili powder (for my mom). My parents really enjoyed this! Thanks!

Baked Oatmeal II

Barbecued Shredded Beef

Yummy! Made in crockpot: 2.8 lbs shoulder roast, on low, for 5.5 hrs. Used just one can of beer and about 1/4 c. water (not 2c.) Didn't do the liquid smoke, and 12 oz. bbq sauce was plenty! Very tender.

Banana Crumb Muffins

Awesome!! So moist! I added vanilla to the wet mix., and cinnamon and nutmeg to the dry. Also used half whole wheat flour, half white. And, oops! I was very low on butter and out of veg. oil, so I used EVOO instead of butter for the muffin batter. Mine made 14 medium size muffins.

Shrimp and Pepper Fajitas

Very tasty! However, I just sauteed it all in the same pan (veggies first, then added the shrimp) instead of transferring to a baking dish. Adding jalapeno is a nice touch. Served with sliced tomato and regular tortillas.

Blueberry Sauce

Excellent consistency. Used a little less sugar and it was plenty sweet. I didn't have OJ, so I used a carton of my daughter's tangerine-orange juice, and it worked great! Was not overpowering like others mentioned with OJ. I wonder if apple juice would work as well? I only used half the cornstarch.

Great! Added one small can of tomato sauce, zuccini, ground pepper, and doubled the basil. Used about 1 T dried oregano instead of fresh. I also only put half the salt. My 1 and 3 year old liked it too!

Asian Lettuce Wraps

Very satisfying! We used romaine lettuce, and I don't have pickled ginger, so I used 1 T of fresh chopped ginger. Also added 1 shredded carrot at the end. Didn't have any green onions, so I bet it will be better next time when I do! I could not find *dark* sesame oil, so I used regular. Added some cayenne pepper for extra spice.

Peach Cobbler V

I loved how easy this was. Based on some reviews, I did make some changes. I used 1 1/2 cups flour, 2 teaspoons baking powder, 2 teaspoons cinnamon, 1/2 teaspoon each of salt and nutmeg, and I used half white sugar and half brown sugar (for a total of 1 c. sugar, which was plenty sweet for us). I also used 30 oz. canned peaches, and felt like it still needed more, maybe another 15 oz. can, as there was more "cake" than peaches.

So very easy and tasty. I ended up adding more of all of the spices. It was a *tad* bit on the tomato side, even with 1.4 lbs. of meat. Topped with green onions and shredded cheese. Oh, and I threw in half a can of diced green chiles that I needed to use.
