Very nice. I used half white flour, half whole wheat. A little on the bland side, might add more salt or spices next time.

Beef and Parmesan Pasta

Yummy, but def. needs to be seasoned up. I added some garlic powder, onion powder, basil and parsley. Used fresh tomatoes instead of canned, ground turkey and chicken broth(not beef) elbow mac. instead of farfalle. Easy!

Pueblo Green Chile Stew

Very yummy and easy. I used frozen corn, not canned. I also used a few diced tomatillos and one Anaheim pepper (roasted, peeled, and diced) instead of the canned green chiles. Not too spicy for the kids! It's a keeper!

East Indian Split Pea Pilaf

Not a fair review, but here goes: I cooked the peas (about 1 c) along with some tumeric, s&p, garlic. Accidentally cooked them a little too long, so they got mushy and unstrainable. I decided to keep it separate from the rice, and added some chicken broth to it to make a thick soup. Was very yummy! I followed the directions for the rice, but used only a c. of rice (basmati), and 2 c. broth. Very nice taste.

B Muffins

I was very pleasantly surprised by how good these were! I followed the recipe as much as possible, but had to make some changes. For those who this review may help: I didn't have wheat bran, so I used oat bran. Then, for the 1/2 c. oat bran, I used wheat germ. Used pecans instead of walnuts, and a full cup of frozen wild blueberries. So yummy!

Avocado Grapefruit Salad

Fantastico! Used white onion, but otherwise followed the recipe (with cucumbers). Great flavor combo! Kind of a lot of work with all the chopping, and I only made a 2 serving salad. Wasn't a big deal, since we had it with take out pizza, but if i was making other dishes, I would keep with a more simple salad! Thank you!

Chicken Salad in the Tropics

Delish! This was a nice 'don't have to measure anything' recipe! All the flavors combined well. Left out the cheese, and used 'Light and Fresh Dressing' (from this website), since this one got mixed reviews.

I improvised and used red wine vinegar, not white, no sugar, (used half the amount of sugar in honey), and left out the mayo. Also used garlic and onion powders vs. fresh, was short on time. Nice!

The Best Red Enchilada Sauce

Nice fresh taste. I messed mine up, halving the recipe but using 4 chiles instead of 3 (oops)!! After doctoring it up, it was great! I used fresh onion instead of the powder, and water instead of broth (didn't have).

Honey Nut Granola

A very forgiving recipe! I subbed wheat germ for the almonds, used roasted, salted sunflower seeds, added about 1/3 c. peanut butter, and sprinkled with brown sugar (just had to). We all loved it. Served with yogurt.

Black-Eyed Pea Gumbo

Yummy, but definitely needs more spices. I added dried thyme and some cajun spice mix (garlic and onion powders plus some red pepper would work fine). I didn't have canned tomatoes, so I used 2 large tomatoes.

Evin's Indian Apricot Chicken

Very tasty. I used a little over half of a cup of the apricot preserves, 3 T vinegar, and about 2/3 c. broth for the sauce. This was plenty for 1.3 lbs of chicken tenders, and reduced the sugar count. Also left out the butter. Will make again!

Yummy, versatile recipe! I only changed pecans for sesame seeds, and did the half applesauce, half oil. Def. doesn't taste as healthy as it is, with whole wheat, oats, flax, and wheat germ in them!
