Cherry Chicken Lettuce Wraps

Mmmm, another yummy one! Much more convenient with a cherry pitter and food processor. Made the "dressing" as is and like it a lot. Needed to add some salt & pepper for my taste, and didnt have chicken breasts, so I deboned some thighs I had. Worth it! Thanks!

Blueberry Buckle

Mmmm...yummy! Followed reviewers and used 1.5 cup flour for cake part, used all brown sugar for cake and half brown, half white suger for topping, and added 1 t. vanilla to batter. I felt my batter was too thick before baking, so I added a couple of splashes more of milk. The blueberries must yield a lot of juice, b/c it was not too dry at all!!

Grilled Sausages with Caramelized Onions and Apples

Hubbie and I thought this was yummy. I used pre-cooked kielbasa, so skipped the boiling, and just added it sliced up into the apple/onion mixture after it caramalized.

Turkey Tetrazzini II

Very yummy! I halved the recipe, and did similar to another reviewer-sauteed onions, garlic, and poblano pepper in EVOO (out of butter), added the flour and let it cook, added the broth and milk, brought to boil, then added some peas, the turkey, the cheese, and the spaghetti. Heated it through and stuck in oven for about 20 min. D-lish!

Quick and Easy 20-Minute Chicken Posole

I couldn't help but add a can of diced tomatoes, some sliced bell pepper, and some chile powder before tasting it as is. It seemed too simple for me. It was very tasty and VERY quick and easy. Will probably make again.

Pepperoni Burgers

Mmmmm....yummy! Nice and juicy. The pieces of pepperoni came out perfectly crispy. I just used 4 oz. of the pre-sliced pepperoni. Added an extra clove of garlic, and 2 T water as someone suggested, and perfect!

Chili Mac, Mexican Style

Nice and spicy, loved it! I halved this recipe for my family of 3. The chorizo gives a smoky flavor. I omitted the salt since the canned tomatoes and chorizo have plenty of sodium already, and didn't miss it. Topped with mozerella. My 2 year old loved it! Perfect for cold weather! Bell peppers would probably work, too.

Tater Tot Casserole III

Didn't have much milk so I went through the reviews and improvised: I seasoned 1 lb. meat with salt, pepper, onion and garlic powder, and worcesteshire, and sauteed some diced poblano pepper with meat. I put the meat and peppers on the bottom of 9x13. I added a layer of French fried onions on top. Then, in the same skillet I cooked the meat in, I heated the cream of mushroom, 2 cans drained green beans, and 1 small can tomato sauce. I added this on top, then the tots, then some shredded cheese. Very homey and yummy!

Shish Tawook Marinated Chicken

Very yummy, I was surprised! The flavor was much more mellow than I expected, and you can't tell at all that there is ketchup and mustard in it. I didn't have a chance to make the sauce, so I just served with plain yogurt and rice. Might add red pepper next time for some kick. Thank you!

Delish! Didnt have celery, so I used celery salt, added dill weed, pimentos, couple pinches of sugar and about 1 T vinegar, for half of the amount of mac in the recipe.

Cajun Pecan Catfish

Very easy. The pecan/cajun seasoning combo was a little weird at first, but I got used to it. I think I was expecting something w/ some sweetness b/c of the pecans. Next time I'll try a little brown sugar as someone suggested.

Microwave Risotto

This was pretty good! I started off cooking at 60% power based on previous review, then switched to 50% after I added the broth, since my onions had browned a lot! (My microwave is 1200 watts) Not too creamy, though might add the extra water next time. And just a little too salty for me.
