Lime Chicken Soft Tacos

Reviewed: Nov. 15, 2006
MMMMmmm yummy! Just tasted the chicken. Mine came out juicy and tender. I cut the chicken into pretty small pieces, and didn't cook nearly as long as stated. Left out oregano per reviews.

Lemonade Pork Chops

Reviewed: Nov. 2, 2006
I made this with 4 boneless skinless chicken breasts tonight. Marinated for 2 hours and then cooked at 300 deg. for about 40 minutes, leaving half of the marinade in the baking dish. Yummy and juicy!

Very good! Made with 3 chicken breasts. Used 3 garlic cloves, and cheddar cheese since that's all I had. Cooked at 350 for about 35 min.

Big Guy Strawberry Pie

Reviewed: Aug. 19, 2006
My big guy and I loved this! The crust was great, I didnt have any problems with it. I did use butter instead of marg., though. I quartered my strawberries, too and mixed them in well with the sugar combo. before adding to pie crust.

Jambalaya

Reviewed: Aug. 8, 2006
Excellent!! Just used olive oil, kielbasa, no file powder, and added some shrimp during the last 7 minutes. Since I added the shrimp, I used a full 28 oz can of crushed tomatoes. Also seasoned with some thyme and fresh basil. Cooked rice separately, so skipped on the broth.

Chile Colorado

Reviewed: Aug. 7, 2006
This is the second time I've made it. This time I used cubed beef stew meat and cut it up some into smaller pieces, but still much easier. I could only find a few decent chile peppers this time around, so it ended up tasting more like carne guisada instead of chile rojo. With the right size chiles, excellent and spicy!!

Mexican Rice II

Reviewed: Aug. 7, 2006
Very good! This will be the recipe I use to make rice. I could never get it just right before, so thank you! Will probably add some bell pepper in with the onions like mom.

Grilled Salmon with Habanero-Lime Butter

Reviewed: Aug. 5, 2006
If there was a 'better than sex salmon', this would be it!!! Easy to make, just the right amount of heat, and the butter was to die for!! Made as stated. Served on a bed of rice. DON'T skip out on the grilling!!

Barbie's Tuna Salad

Reviewed: Aug. 4, 2006
This was good, but I don't think I'd make it again. Maybe it was my curry powder, but the taste was just a little weird for me.

Honeyed Pork Chops

Reviewed: Aug. 1, 2006
Very nice taste! I used some rather small/thin chops, though and still managed to overcook them a little, so will use some thicker ones next time.

Erin's Indonesian Chicken

Reviewed: Jul. 31, 2006
This is a keeper! Made as stated, but next time will increase the chile to 2-3 t. for more kick. Used all natural peanut butter (no additives, sweetners, or preservatives), so maybe that makes a difference in not tasting too peanut butter-y....Also toasted my peanuts-yum!

French Toast Souffle

Reviewed: Jul. 31, 2006
I just went ahead and made as suggested by TROUTS328, except with 5 eggs and 1 c. half n half, since I only used 1/2 a loaf of cinnamon bread. Didnt use the milk. Easy and excellent!! Will double for more guests and make in 9x13 next time.

Kielbasa and Potato Bake

Reviewed: Jul. 19, 2006
This was great with the following changes: Sauteed the kielbasa, garlic, onions, and bell pepper for about 5 min. Then added the potatoes and cooked for another 5 min, before transferring to baking dish. Then added the cream of mushroom and about 3/4 c. milk. Omitted the salt. So, I ended up baking it all for about 35 min.

Nanny's Goulash

Reviewed: Jul. 18, 2006
Thought this was pretty tasty. Did make a few changes/additions: Used only 1 green bell pepper, no red. Used yellow onion instead of red. Sauteed the mushrooms, onions, bell pepper, and 1 clove garlic first, then added some lean beef. There wasn't any fat to drain, so it saves some time. I also added some chili powder with all the other spices. Omitted the garlic sauce. Served with brown rice and topped with 4-cheese blend.
